These are my 2 blueberry lovin' guys most favorite waffle. They will even eat them with blueberry syrup! I always double this and if there are any left they go in the freezer. DBF Rick will eat these like a cookie and likes them hot and crispy with a scoop of ice cream on top!

Yield 6 waffles

Number Of Ingredients 8

1 cup blueberries
3 teaspoons baking powder
2 eggs, separated
1 tablespoon sugar
2 cups sifted flour
1 1/2 cups milk
1/2 teaspoon salt
1/4 cup melted butter

Steps:

  • Preheat the waffle iron.
  • Beat egg whites til stiff and set aside.
  • Sift together dry ingredients.
  • Slowly stir in milk, beaten egg yolks and melted butter.
  • Fold in blueberries.
  • Fold in egg whites which were stiffly beaten.
  • Bake in hot waffle iron.

An easy Blueberry Compote recipe

Number Of Ingredients 5

1/2 cup water
1/2 cup sugar
2 (3- by 1/2-inch) strips fresh lemon zest
2 cups blueberries (10 oz)
1 1/2 tablespoons fresh lemon juice

Steps:

  • Boil water, sugar, and zest in a 1-quart heavy saucepan, uncovered, 5 minutes. Discard zest. Stir in blueberries and simmer, stirring occasionally, until blueberries begin to burst, 3 to 5 minutes. Remove from heat and stir in lemon juice. Serve warm or at room temperature.
