This mouthwatering cobbler with pecans and peaches is easy thanks to refrigerated Pillsbury™ Pie Crusts. Make ahead and freeze!

Number Of Ingredients 8

12 peaches, peeled, sliced (16 cups)
3 1/4 cups sugar
1/3 cup all-purpose flour
1/2 teaspoon ground nutmeg
2/3 cup butter
1 1/2 teaspoons vanilla
2 boxes (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1/2 cup chopped pecans, toasted

Steps:

  • Heat oven to 475°F. In Dutch oven, stir peaches, 3 cups of sugar, flour and nutmeg. Let stand 10 minutes. Heat to boiling; reduce heat. Simmer 10 minutes or until peaches are tender. Remove from heat; stir in butter and vanilla.
  • Remove 2 pie crusts from pouches; unroll on work surface. Sprinkle 1/4 cup of the pecans and 2 tablespoons sugar over 1 crust; top with second crust. Roll into 12-inch round, gently pressing pecans into dough. Cut into 1 1/2-inch strips. Repeat with remaining 2 pie crusts, 1/4 cup pecans and 2 tablespoons sugar.
  • Spoon half of peach mixture into greased 13x9-inch or 2 8-inch baking dishes. Arrange half of pastry strips in lattice design over mixture. Bake 20 minutes or until lightly browned. Spoon remaining peach mixture over baked pastry. Top with remaining pastry strips in lattice design. Bake 15 minutes longer or until filling is bubbly and pastry is lightly browned. Serve warm or cold.

Chicken, rice, caramelized onions and Swiss cheese come together for a comforting dinner that promises to take the bite out of any chilly night. Plus, who can resist that flaky lattice crust top?

1/2 cup butter
4 cups halved and thickly sliced sweet onions (about 2 large onions)
1 1/2 cups uncooked instant white rice
2 cups Progresso™ beef flavored broth (from 32-oz carton)
1 tablespoon Worcestershire sauce
2 cups shredded deli rotisserie chicken
1 cup shredded Swiss cheese (4 oz)
1 can (8 oz) refrigerated Pillsbury™ Original Crescent Dough Sheet
1 tablespoon butter, melted
1/2 teaspoon dried thyme leaves

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 12-inch skillet, melt 1/2 cup butter over medium-high heat until sizzling. Cook onions in butter 15 to 20 minutes, stirring frequently, until onions are very soft and golden brown.
  • Stir in rice; cook 2 to 3 minutes, stirring frequently, until toasted. Stir in broth and Worcestershire sauce. Heat to simmering, stirring occasionally. Stir in chicken; cook 3 to 4 minutes or until heated. Stir in cheese, mixing to combine. Transfer hot mixture to baking dish; cover and keep warm.
  • Unroll dough on work surface; cut lengthwise into 8 strips. Arrange 4 strips lengthwise on top of filling. Cut remaining 4 in half, and lay crosswise on top of other strips to form a lattice design over chicken mixture. Brush dough with 1 tablespoon melted butter; sprinkle thyme on top.
  • Bake 18 to 22 minutes or until filling is bubbly and crust is deep golden brown. Let stand 5 minutes before serving.

  • In a large bowl, combine sugars; add peaches and toss gently. Cover and let stand for 1 hour. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate or iron skillet.Trim even with rim. Refrigerate while preparing filling. , Preheat oven to 400°. Drain peaches, reserving juice. In a small saucepan, combine cornstarch, nutmeg, cinnamon and salt; gradually stir in reserved juice. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in lemon juice and butter. Gently fold in peaches. Pour into crust. , Roll remaining dough to a 1/8-in.-thick circle; cut into 1-1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom crust; flute edge. Cover edge loosely with foil. Bake 40 minutes; remove foil. Bake until crust is golden brown and filling is bubbly, 10-20 minutes longer. Cool on a wire rack.
