Blueberry Almond Jam Bars Recipe - Rachael Ray Show image

A quick, oat crust is topped with blueberry jam + sliced almonds & baked—voila! Easy dessert bars.

Number Of Ingredients 13

¾ cup butter
softened
1 ¼ cup flour
¾ cup light-brown sugar
½ cup rolled oats
1 teaspoon vanilla bean paste or vanilla extract
1 teaspoon baking powder
½ teaspoon kosher salt
¾ cup blueberry jam
¼ cup sliced almonds
½ teaspoon flaky sea salt
Confectioners' sugar
for topping

Steps:

  • Preheat oven to 350°F
  • Line an 8-inch square baking pan with a parchment paper overhang
  • Place the butter, flour, oats, brown sugar, vanilla bean paste, baking powder and salt into the bowl of a stand mixer
  • Mix on a low speed until a crumbly dough forms
  • Place ¾ dough into the prepared pan
  • Using your hands, press the dough into an even layer so it covers the bottom
  • Spoon jam on top and, using an offset spatula, spread, leaving a ¼-inch rim around the edges
  • Crumble remaining dough on top
  • Sprinkle with almonds and flaky salt
  • Bake until brown around the edges, about 30 minutes
  • Once cool, using the parchment paper, lift the bars from the pan
  • Dust with confectioners' sugar and cut into 16 pieces

Number Of Ingredients 13

1 cup butter, softened
1-3/4 cups sugar
4 large egg, room temperature
1 teaspoon vanilla extract
3 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 can (21 ounces) blueberry pie filling
1/8 teaspoon ground nutmeg
GLAZE:
1-1/4 cups confectioners' sugar
2 tablespoons lemon juice
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; add to creamed mixture just until combined. , Spread half of the batter into a greased 15x10x1-in. baking pan. Spread with pie filling; sprinkle with nutmeg. Drop remaining batter by teaspoonfuls over the top. , Bake until golden brown, 40-45 minutes. In a small bowl, combine glaze ingredients until smooth. Drizzle over warm bars. Cool completely on a wire rack.
