These aren't really biscuits, but they do make a nice low point breakfast treat. If you are expecting a traditional baking powder biscuit, this is the the recipe you want. The oatmeal gives the biscuits a nuttier flavor and they end up tasting more like a blueberry muffin than a biscuit. The batter is rather runny, so I recommend you use a cookie scoop when putting them on the baking sheet. I was given this recipe by a friend in WWs. These are 1 point per biscuit.

Number Of Ingredients 6

2 cups oatmeal
3 tablespoons Splenda sugar substitute
1 tablespoon baking powder
2 tablespoons unsalted butter
1 cup buttermilk
1 1/2 cups frozen blueberries

Steps:

  • Preheat oven to 400.
  • Grind the oatmeal into a flour using your food processor.
  • Combine the oatmeal, Splenda and baking powder.
  • Cut in butter with a pastry cutter until it resembles a course meal.
  • Stir in buttermilk.
  • Fold in blueberries.
  • Place mixture into 13 mounds on a parchment lined baking pan.
  • Bake 20 to 25 minutes.
  • I like to serve with a little wild honey (counting the points of course).

Biscuits for dessert? You betcha. These are great with that morning cup of coffee or for a quick and easy dessert any time of the day. They might even go well after a meal of fried chicken. Smile.

Number Of Ingredients 8

1 cup fresh Blueberries, rinsed and drained
3 cups Self-Rising Flour, sifted
2 Tablespoons Lard
1 Tablespoon Granulated Sugar
1 cup Buttermilk
1 cup Confectioner’s Sugar
1/2 teaspoon Vanilla Flavoring
1 Tablespoon Milk, maybe a few drops more

Steps:

  • Rinse fresh berries under cold running water. Set aside to drain.
  • Sift the flour into a large mixing bowl.
  • Add the lard.
  • Add the sugar.
  • Cut the lard into the flour until it’s about pea sized pieces.
  • Make a well in the center of the flour. Add the buttermilk.
  • Stir with your hand, combining the flour and milk to make the dough.
  • Turn the ball of dough out onto a parchment paper sheet on your countertop.
  • Knead the dough a couple of turns, adding more flour so it’s not sticking to your counter or fingers.
  • Gently press the dough out until it’s about ¼ inch thick.
  • Sprinkle the cup of blueberries over the top of the dough.
  • Lightly press the berries into the dough.
  • Fold the top half of the dough down over the bottom half.
  • Fold the dough again from left to right.
  • Gently press the dough out until it’s about ¾ inch thick.
  • Cut biscuits out of the dough.
  • Place biscuits in a lightly greased skillet.
  • Bake at 500F degrees for 10 to 12 minutes, until lightly browned on top.
  • Remove from oven when done. Place on wire rack to cool.
  • Brush the tops with butter once you remove them from the oven.
  • To Make The Icing:
  • Place confectioner’s sugar in a small mixing bowl.
  • Add the vanilla flavoring.
  • Gradually add milk until icing is of desired consistency.
  • Drizzle icing over warm biscuits. Serve while warm.
  • Enjoy!

  • Preheat the oven to 350°F (or the temperature your package of biscuits specifies). Line a baking sheet with parchment paper (not required, but helpful). Toss together the blueberries, granulated sugar, brown sugar, cornstarch, cinnamon, and nutmeg. Cook in a medium saucepan, stirring occasionally, over medium high heat, for 3-4 minutes, or until the fruit is saucy but thick. In a large bowl using a hand mixer, or in the bowl of a stand mixer, using the whisk attachment, beat the cream cheese and optional powdered sugar until fluffy, about 1 minute. Split all of the biscuits in half and place the bottom halves on the prepared baking sheet, about 2” apart. Spoon about a tablespoon of cream cheese onto each biscuit. Then spoon about a tablespoon of the blueberry filling on top. Add the top half and press the edges to seal. Reserve any leftover blueberry filling for serving. Bake according to package instructions. Once the biscuit bombs are golden on top, brown the butter. Place it in a small saucepan and cook it over medium high heat until it melts, starts to crackle, and smells nutty. Careful not to burn it! Brush the browned butter over the baked biscuit bombs. Best served warm but will keep for several days in an airtight container. Refrigeration not required.
