BERRY BLUE WATERMELON SALAD | HY-VEE

6 c. of cubed watermelon
2 c. of blueberries, rinsed and drained
2 c. of rinsed and sliced strawberries
2 tbsp. of minced red onion
0.25 c. of light raspberry vinaigrette
0.333 c. of crumbled blue cheese
2 c. of raspberries, rinsed and drained

Steps:

  • 1. Combine watermelon, blueberries, strawberries and minced onion in large bowl.
  • 2. Drizzle with salad dressing and toss to coat.
  • 3. Sprinkle blue cheese over fruit and stir to combine.
  • 4. Gently fold in raspberries. Cover and refrigerate before serving.
