Grits are a staple on the Southern table for breakfast, lunch and dinner, and can be served sweet or savory. Adding blue cheese turns this ordinary side dish into something really special. If you love blue cheese or grits half as much as I do, you'll love this recipe! Please follow the liquid and cooking time indicated on your package, using half chicken stock, half milk proportionally as your liquid. Quick, Instant and Regular grits can all be used by adjusting the cooking time.

2 cups reduced sodium chicken broth
2 cups milk
1 cup quick-cooking grits
½ cup crumbled mild blue cheese
1 teaspoon garlic powder
salt and pepper to taste

Steps:

  • Combine the chicken broth and milk in a saucepan, and bring to a simmer over medium-low heat. Gradually stir in the grits. Cover the pan and simmer over low heat for about 5 minutes, until the grits are thickened and tender.
  • Remove the grits from the heat, and stir in the blue cheese, garlic powder, salt, and pepper. Mix well to combine, and serve hot.

1 medium (4-lb.) Blue Hokkaido or kabocha squash
4 thick-cut bacon slices, chopped 
8 cups whole milk
2 cups uncooked stone-ground yellow grits
¼ cup unsalted butter, cut into pieces, plus more for greasing
¼ cup crème fraîche
1 tablespoon chopped fresh thyme leaves
1 teaspoon chopped fresh sage leaves, plus whole leaves for garnish
1?½ tablespoons kosher salt
1?½ teaspoons black pepper
8 ounces sharp Cheddar cheese, shredded (about 2 cups), divided

Steps:

  • Using a sharp knife, remove stem and base from squash and discard; slice squash in half lengthwise. Remove seeds and pulp with a spoon, and discard. Using a vegetable peeler, remove and discard skin. Cut each squash half into 2 pieces. Grate, using large holes of a box grater, to yield 4 cups grated squash. Wrap grated squash in paper towels, and squeeze out as much moisture as possible. Transfer grated squash to a medium bowl; set aside at room temperature. 
  • Heat a nonstick skillet over medium. Add bacon. Cook, stirring occasionally, until crisp, about 6 minutes. Using a slotted spoon, transfer bacon to a plate lined with paper towels, and set aside. Reserve 1 tablespoon drippings.
  • Preheat oven to 375°F. Bring milk to a gentle boil in a large saucepan over medium-high. Whisk in yellow grits and grated squash; return to a boil, whisking constantly. Reduce heat to low; simmer mixture, whisking often, until grits are mostly tender and thick, about 15 minutes. Whisk in butter, crème fraîche, thyme, chopped sage, kosher salt, pepper, 1½ cups of the cheese, and reserved bacon drippings. Continue simmering, stirring occasionally, over low until well combined and creamy, about 5 more minutes. 
  • Grease a 13- x 9-inch baking dish with butter. Pour grits mixture into baking dish, and smooth top with a spatula. Sprinkle bacon and remaining ½ cup cheese evenly over top; arrange sage leaves on surface. Bake in preheated oven until cheese is melted and golden brown and sage leaves are crisp, about 20 minutes. Remove from oven; cool 5 minutes before serving.

Reheat Grits PREHEAT oven to 350 degrees. While shrimp is being prepared, heat covered grits 20 to 30 minutes, until warmed through. Before serving, uncover and stir well. Prepare Shrimp In a 12-inch skillet (or in two batches in a 10-inch skillet) heat 1 tablespoon butter and olive oil over medium-high heat. Mix shrimp with Creole seasoning. When butter is melted, add shrimp. Cook until the shrimp start to turn pink on one side, 1-2 minutes, then flip each one and cook just until shrimp are opaque, 30 seconds to 1 minute. Do not overcook. With a slotted spoon, remove shrimp from pan and reserve in a bowl. LOWER heat to medium. To drippings in skillet, add sausage, onion, celery and thyme. Cook until onion is translucent, about 5 minutes. ADD remaining 1 tablespoon butter and tomatoes. Cook another 5 minutes, until mixture starts to reduce. Add lemon juice, shrimp and any juices shrimp may have given off. Cook another 5 minutes, until shrimp are warmed through completely. SERVE while hot with the grits. Refrigerate leftovers. Keeps up to two days.
