From the legendary Morton's Steak House. Simply amazing Blue Cheese Dressing. As much as I love to lighten things, this just isn't the same using light ingredients. This calls for Durkee's Famous Sauce, if you can't locate Durkee's, I have another recipe for a similar sauce called Mustard-Mayonnaise Sauce. Cook time includes overnight chilling.

Yield 4 cups, 15 serving(s)

Number Of Ingredients 8

2 cups mayonnaise (not Miracle Whip)
1 cup sour cream
2 tablespoons sour cream
1/4 cup buttermilk
1 teaspoon Durkee's sauce (sold in the condiment aisle or with the dressings)
1/2 teaspoon seasoning salt
7 ounces blue cheese, crumbled (about 1.5 C)
salt and pepper

Steps:

  • In a large mixing bowl, whisk together the mayonnaise and sour cream.
  • Add the buttermilk, Durkee sauce, and seasoned salt.
  • Whisk until well mixed.
  • Season to taste with salt and freshly ground black pepper and whisk again.
  • Using a rubber spatula, gently fold in the blue cheese.
  • Transfer to a storage container with a tight-fitting lid and refrigerate for at least a day and up to four days.

How to make Steak with Blue Cheese Dressing

8 ounce(s) blue cheese, crumbled
1 - garlic clove, finely chopped
2 tablespoon(s) dry white wine
1 dash(es) ground red pepper
2 tablespoon(s) butter
4 small new york strip, 1 inch thick
1 dash(es) freshly ground black pepper
1/4 cup(s) water
1 - parsley for garnish

Steps:

  • Cook and stir cheese, garlic, wine and red pepper over low heat, stirring frequently, until cheese is melted.
  • Keep warm.
  • Heat butter in 12-inch skillet until hot.
  • Cook beef steaks over medium-high heat, turning once, until medium doneness, about 5 minutes on each side.
  • Sprinkle with pepper.
  • Remove from skillet and keep warm.
  • Add water to skillet.
  • Heat to boiling, stirring constantly to loosen browned bits.
  • Boil 2 minutes.
  • Stir pan juices into cheese mixture.
  • Pour over steaks.
  • Sprinkle with parsley.
