Number Of Ingredients 8

4 tsp of Basil Pesto
4 Slices of Good Quality Sandwich Bread
? cup of Shredded Mozzarella
6 Slices of Thinly Sliced Pancetta
1 Tomato, sliced
? cup of Fresh Baby Spinach
A Few Fresh Basil leaves
Little drizzle of Olive oil

Steps:

  • 1) Preheat a grill pan over medium high heat, cook the thin pancetta for about a minute on each side, remove to a plate. 2) Reduce the heat to medium. Lay the bread on your work surface and smear 1 tsp of pesto on each slice. 4) Top one slice of the bread with about 2 Tbsp of the mozzarella, then stack on to a couple tomato slices, the cooked pancetta, a handful of spinach, a few basil leaves and 2 more Tbsp of cheese. Top it all with another bread slice, drizzle a tiny bit of oil on your preheated grill pan and cook each sandwich for about 3 minutes or so on each side or until the cheese has melted.

If you can't find French bread rolls, halve an 8-ounce baguette lengthwise, and cut into fourths. Serve with carrot sticks.

3 center-cut bacon slices
2 (6-ounce) skinless, boneless chicken breast halves, halved lengthwise
4 cups baby spinach leaves
2 teaspoons balsamic vinegar
3 ounces reduced-fat white cheddar cheese, shredded (about 3/4 cup)
2 tablespoons 1/3-less-fat cream cheese
4 (2-ounce) French bread rolls, halved lengthwise
8 tomato slices
Cooking spray

Steps:

  • Heat a large skillet over medium heat. Add bacon; cook until crisp. Remove bacon from pan using a slotted spoon; crumble. Add chicken to drippings in pan; cook 2 minutes on each side or until done. Remove chicken from pan. Add baby spinach to pan; cook 30 seconds or until spinach begins to wilt, stirring constantly. Stir in balsamic vinegar.
  • Combine cheddar cheese and cream cheese in a small microwave-safe bowl. Microwave at HIGH 30 seconds or until melted; stir with a whisk until smooth. Stir in bacon. Spread cheese mixture evenly over cut sides of rolls. Divide tomatoes evenly over bottom halves of rolls; top with chicken and spinach mixture. Top sandwiches with top halves of rolls. Return pan to medium heat. Coat both sides of sandwiches with cooking spray. Add sandwiches to pan. Place a cast-iron skillet on top of sandwiches; press gently to flatten. Cook sandwiches 3 minutes on each side or until bread is toasted (leave skillet on sandwiches as they cook). Cut each sandwich in half diagonally.

  • Make the shallot cream sauce: Heat the oil over medium heat in a medium saucepan. Add the shallots and cook, stirring continuously to prevent browning, until they begin to release their juices, about 2 minutes. Add the wine and vinegar, raise the heat to high, stir and scrape with a wooden spoon to dissolve any pan deposits, and boil briefly until the liquid reduces slightly, 1 to 2 minutes. Stir in the cream and continue boiling until the liquid has reduced by half, about 5 minutes. Reduce the heat to low and, little by little, whisk in the butter to form a thick sauce. Pour the sauce through a fine-mesh strainer into a clean pan. Season with lemon juice and salt and pepper to taste. Cover the pan and keep warm if making the sandwiches right away. Cook the shrimp. Turn off the grill and allow to cool slightly, then wipe the cooking surfaces clean with paper towels (taking care not to burn your fingers). Turn the grill back on. Toast all of the slices of bread before assembling the sandwiches. To assemble the sandwiches, spread a little mayonnaise on all of the bread slices, and arrange a layer of lettuce leaves on 4 of them for double-decker sandwiches, 6 for regular sandwiches. Top the lettuce with a layer of tomato slices and season them lightly with salt and pepper. Arrange 2 bacon slices on top of the tomatoes on each sandwich (3 if you're making the double-decker clubs). Add a second slice of bread for double-decker clubs and top it with a thin spread of mayonnaise and a little lettuce. Heat the shallot cream sauce over medium-low heat. Add the shrimp and stir them in the sauce until warmed through, 3 to 5 minutes. Distribute the shrimp and sauce evenly among the 4 or 6 sandwiches and top them with the remaining lettuce and bread slices. Place the sandwiches in the panini maker or double-sided grill, close the machine, and cook until the outer bread slices turn golden brown, about 3 minutes. Cut each sandwich diagonally in half and serve.
