BLT Burgers Recipe: How to Make It - Taste of Home image

My husband loves a good BLT, but sometimes he wants something a little more substantial. That's where these BLT burgers come in. To keep prep simple, I use packaged pre-cooked bacon and zap it in the microwave for a few seconds before serving. —Deborah Biggs, Omaha, Nebraska

1 cup mayonnaise
1/2 cup crumbled blue cheese
1/4 cup ketchup
3 tablespoons tomato paste
1 teaspoon salt
1 teaspoon pepper
3 pounds ground beef
8 hamburger buns, split
8 lettuce leaves
24 cooked bacon strips
8 slices tomato, optional

Steps:

  • In a small bowl, mix mayonnaise, cheese and ketchup. In a large bowl, mix tomato paste, salt and pepper. Add beef; mix lightly but thoroughly. Shape into eight 3/4-in.-thick patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat 5-8 minutes on each side or until a thermometer reads 160°. , Serve burgers on buns with sauce, lettuce, bacon and, if desired, tomato.
    Freeze option: Place patties on a plastic wrap-lined baking sheet; wrap and freeze until firm. Remove from pan and transfer to a resealable plastic freezer bag; return to freezer. To use, grill frozen patties as directed, increasing time as necessary for a thermometer to read 160°.

bacon slices, halved

ground beef

kosher salt

fresh ground black pepper

1/2 c.

mayonnaise

Juice of 1/2 lemon

3 tbsp.

finely chopped chives

Butterhead lettuce, for serving

Steps:

  • Preheat oven to 400º and place a baking rack inside of a baking sheet (to help catch grease). Make a bacon weave: On the baking rack, line 3 bacon halves side-by-side. Lift one end of the middle bacon slice and place a fourth bacon half on top of the side pieces and underneath the middle slice. Lay the middle slice back down. Next, lift the two side strips of bacon and place a 5th bacon half on top of the middle piece and underneath the sides. Lay the side slices back down. Finally, lift the other end of the middle slice and place a 6th slice on top of the side pieces and underneath the middle slice. Repeat to make a second weave. Season with pepper and bake until bacon is crispy, 25 minutes. Transfer to a paper towel-lined plate to blot grease. Let cool for at least 10 minutes. Meanwhile, make burgers: Preheat a grill (or grill pan) to medium-high heat. Shape ground beef into large patties and season both sides with salt and pepper. Grill until cooked to your liking, about 4 minutes per side for medium. Make herb mayo: In a small bowl, whisk together mayonnaise, lemon juice, and chives. Assemble burgers: For each burger, place a bacon weave on the bottom then spread it with some herb mayo. Top with burger, lettuce, tomato and remaining bacon weave. Serve immediately.
