It is so easy and so yummy! As I love blender recipes I had to give it a try and it came out great. I found it at http://fooddownunder.com/

Prep Time 5 minutes

Cook Time 25 minutes

Yield 1 pie

Number Of Ingredients 8

1 (13 ounce) can evaporated milk
3 eggs
1 cup sugar
1 cup flaked coconut
3 tablespoons vegetable oil
3 tablespoons all-purpose flour
1/2 teaspoon vanilla extract
ground nutmeg

Steps:

  • Combine all ingredients except nutmeg in container of electric blender.
  • Process mixture until well blended.
  • Pour into a greased and floured 10-inch pie plate (mixture will be thin).
  • Sprinkle top of mixture with nutmeg.
  • Bake at 370 F for 25 minutes or until pie is set.
  • Let pie stand 10 minutes before serving.

2 cups milk
½ cup baking mix
¼ cup butter
¾ cup white sugar
4 eggs
1?½ teaspoons vanilla extract
1 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie plate.
  • Combine milk, sugar, biscuit mix, eggs, butter or margarine, and vanilla in blender container. Cover, and blend on low speed for 3 minutes. Pour into prepared pie plate. Let stand about 5 minutes. Sprinkle with coconut.
  • Bake for 40 minutes. Serve warm.
