2 cans (15 ounces each) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, drained
2 medium onions, finely chopped
1 teaspoon olive oil
3 garlic cloves, minced
1 teaspoon ground cumin
3 cups vegetable broth
1 can (15 ounces) pumpkin
2 tablespoons cider vinegar
1/2 teaspoon pepper
2 tablespoons bourbon, optional
1/2 cup reduced-fat sour cream
1/2 cup thinly sliced green onions
1/2 cup roasted salted pumpkin seeds

Steps:

  • Place beans and tomatoes in a food processor; cover and process until blended. Set aside., In a Dutch oven, saute onions in oil until tender. Add garlic and cumin; saute 1 minute longer. Stir in the broth, pumpkin, vinegar, pepper and bean mixture. Bring to a boil. Reduce heat; cover and simmer for 20 minutes., Stir in bourbon if desired. Garnish each serving with sour cream, green onions and pumpkin seeds.

2 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 1/4 cups sugar
1 cup Land O Lakes® Butter softened
2 large Land O Lakes® Eggs
1 teaspoon vanilla
1 (15-ounce) can pumpkin
1/4 cup unsweetened cocoa
Glaze
1 cup powdered sugar
1 teaspoon vanilla
2 to 3 tablespoons milk
1/4 teaspoon pumpkin pie spice

Steps:

  • Heat oven to 350°F. Grease 15x10x1-inch baking pan; set aside.
  • Combine flour, cinnamon, baking powder, baking soda, salt and remaining spices in bowl. Set aside.
  • Combine sugar and butter in bowl; beat at medium speed until creamy. Add eggs and 1 teaspoon vanilla; continue beating until well mixed. Add pumpkin; beat until well mixed.
  • Add flour mixture to pumpkin mixture, beating at low speed and scraping bowl often, until well mixed.
  • Spoon 2 1/4 cups batter into bowl. Add cocoa; mix well. Spread into prepared pan. Spread remaining batter over top.
  • Bake 21-24 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes.
  • Combine all glaze ingredients except milk in bowl; beat at low speed, gradually adding enough milk for desired spreading consistency. Drizzle glaze over bars.
