6 medium Apple
2 cups superfine caster sugar
0.5 cup water

Steps:

  • Wipe the apples well to remove any waxy coating - otherwise the toffee won't stick. Insert a clean stick into each stalk end.
  • Heat the sugar, water and food colouring in a pan over a low heat until melted. Bring to a boil and cook steadily until a little of the mixture forms a hard crack when dropped into chilled water; 150°C | 300°F on a sugar thermometer. Remove from the heat and leave to stand for 5 minutes.
  • Dip the apples into the toffee, swirling them around until coated. Place on non-stick baking paper to set.

1 (12 ounce) package semi-sweet chocolate chips
1 cup Jack Daniels Whiskey (Blackjack)
2 (1 lb) boxes powdered sugar
1 cup chopped pecans or 1 cup chopped walnuts

Steps:

  • Melt chocolate bits in a microwave or double broiler, stirring frequently.
  • As soon as chocolate is melted, mix Jack Daniels with the powdered sugar in a large bowl,and add to the melted chocolate, stir well, add nuts.
  • Turn into a 13x9x2-inch pan and cover with plastic wrap.
  • This sets quickly and you want to cool it long enough to set but still warm enough to cut.
  • Since this is a no cook recipe regarding the booze be careful how much you eat and don't serve to minors.
