Chocolate cream cheese cupcakes, rich and gooey. Serve these little gems with a tall glass of ice cold milk.

Number Of Ingredients 14

1 (8 ounce) package cream cheese, softened
1 egg
? cup white sugar
? teaspoon salt
1 cup miniature semisweet chocolate chips
1?½ cups all-purpose flour
1 cup white sugar
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 cup water
? cup vegetable oil
1 tablespoon cider vinegar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line muffin tins with paper cups or lightly spray with non-stick cooking spray.
  • In a medium bowl, beat the cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt until light and fluffy. Stir in the chocolate chips and set aside.
  • In a large bowl, mix together the flour, 1 cup sugar, cocoa, baking soda and 1/2 teaspoon salt. Make a well in the center and add the water, oil, vinegar and vanilla. Stir together until well blended. Fill muffin tins 1/3 full with the batter and top with a dollop of the cream cheese mixture.
  • Bake in preheated oven for 25 to 30 minutes.

1/2 cup(s) sugar
1 teaspoon(s) vanilla
1 package(s) (8 oz) cream cheese
1 - egg
1 package(s) (12 oz) chocolate chips (i use milk chocolate)
CAKE
2 cup(s) sugar
1 cup(s) oil
2 - eggs
3 cup(s) flour
3/4 cup(s) unsweetened cocoa
2 teaspoon(s) baking powder
2 teaspoon(s) baking soda
1 1/2 teaspoon(s) salt
1 cup(s) hot water
1 cup(s) milk
1 tablespoon(s) cider vinegar
1 teaspoon(s) vanilla
ICING
1 cup(s) powdered sugar
2 tablespoon(s) unsweetened cocoa
2 tablespoon(s) melted butter
2 teaspoon(s) vanilla
3-5 teaspoon(s) hot water, or until drizzle consistency

Steps:

  • Preheat oven to 350 degrees
  • In a small bowl combine cream cheese mixture ingredients except chocolate chips until well blended, stir in chocolate chips
  • In a large bowl beat together all cake ingredients until well blended
  • Pour 1/2 the batter into a 10-inch greased tube pan, spoon cream cheese mixture over batter. Pour remaining batter over cream cheese mixture
  • bake 1 hr 15 min to 1 1/2 hrs
  • cool cake, remove from pan, mix together icing ingredients and drizzle over cake, Enjoy!!!
  • This is also fabulous in mini muffin cups. Just fill mini paper cups 3/4 full of batter, drop a 1/4 to 1/2 tsp. cream cheese mixture in center of batter and bake
