Abuelo Peláez’s Frijoles Negros (Black Beans) Recipe - NYT ... image

This delicious recipe comes from Ana Sofia Peláez of Brooklyn, who dug up a handful of faded index cards that her grandparents had left behind, with treasured recipes written in neat script.

Provided by Rachel L. Swarns

Total Time 2 hours 40 minutes

Yield About 8 cups

Number Of Ingredients 20

1 pound dried black beans, rinsed thoroughly
1 tablespoon extra virgin olive oil
1/2 large white onion, chopped
1 green bell pepper, chopped
4 to 5 garlic cloves, crushed
1 bay leaf
1/4 cup extra virgin olive oil
1/2 large white onion, finely chopped
1 green bell pepper, finely chopped
3 garlic cloves, finely chopped
1 bay leaf
1/2 teaspoon cumin
1/2 teaspoon oregano
1 teaspoon black pepper, plus more to taste
1 and 1/2 teaspoons salt, plus more to taste
2 tablespoons sherry vinegar
1/2 cup dry white wine
1/4 cup green olives stuffed with pimentos, thinly sliced
1 teaspoon sugar
Cooked white rice for serving (optional)

Steps:

  • In a large pot, soak beans overnight in 10 cups of water.
  • Add 1 tablespoon oil, the onion, bell pepper, garlic cloves and bay leaf to beans, and bring to a boil. Lower heat to medium and simmer for 1 hour, checking regularly and skimming the foam that forms on top.
  • Meanwhile, make the sofrito. Warm remaining 1/4 cup oil in a large skillet over medium heat. Add the half onion, 1 bell pepper and 3 garlic cloves and sauté for about 5 minutes until soft. Add 1 bay leaf, cumin, oregano, black pepper and salt, and cook for 2 minutes more.
  • Add the sofrito to beans. Stir in sherry vinegar, wine and olives, and bring to a boil. Lower to a simmer and cook, covered, for about 1 to 1 1/2 hours, stirring frequently, until slightly thickened and cooked through. Remove both bay leaves, and adjust salt and pepper to taste. Remove from heat and add sugar. Serve as soup or a side dish, or over white rice.

CHILLI CON CARNE MEATBALLS WITH SWEET PEPPERS AND BLACK ...
Meatballs are fantastic! Making your own is not only easy, but it’s a great way of controlling what you put in them, too. I’ve used paprika and chilli powder in this recipe, for a lovely chilli con carne kick, but you could add all sorts of other flavours once you’ve mastered this recipe – dried or fresh herbs, different spices, citrus zest, the list goes on. I’ve served this with a charred chilli per person – depending how spicy you like your food, feel free to chop and stir in just a little, or the whole thing if you think you can handle it!

    1. Cook the rice in a pan of boiling salted water over a medium heat for 25 minutes, or until tender, then drain well. Tip back into the pan, season with black pepper, cover with a lid and keep to one side.
    2. Meanwhile, trim and finely slice the spring onions, then halve, deseed and roughly chop the pepper. Pick the coriander, finely chopping the leaves and stalks.
    3. Heat 1 tablespoon of oil in a wide saucepan over a medium heat, add the sliced spring onion, pepper and coriander stalks and fry for 4 to 5 minutes, until softened, stirring occasionally.
    4. Meanwhile, place the beef into a mixing bowl, add the paprika, chilli powder and a good pinch of salt and pepper and mix together well. Using wet hands, roll the mixture into 6 little balls.
    5. Add the tomatoes to the saucepan along with ½ a tin’s worth of water, breaking the tomatoes up with a spoon as you go.
    6. Bring to the boil then drain and add the black beans.
    7. Preheat the grill to high. Prick the chillies and place on a baking tray under the hot grill for 10 minutes, or until blackened, turning often.
    8. Meanwhile, heat ½ a tablespoon of oil in a frying pan over a medium heat, add the meatballs and cumin seeds, then fry for 4 minutes, or until browned all over, stirring often.
    9. Add the meatballs to the tomato sauce and cook for 6 to 8 minutes, or until the sauce is thick and the meatballs are cooked through, stirring occasionally.
    10. Fold the chopped coriander leaves through the rice, then divide between your plates. Top each with the meatballs and beans, 1 blackened chilli, 1 tablespoon of yoghurt, and 1 wedge of lime for squeezing over.

After adding the black beans, I added 1/4 tsp garlic powder, 1/8 tsp paprika, and a pinch of cayenne pepper. I make this recipe at least every other week. A great way to get a lot of fiber and protein without a lot of fat and carbs.
