I live where black beans are a favorite, and I wanted black bean soup with a different taste. The results were wonderfully delicious. Serve with corn muffins. This recipe freezes well. Enjoy.

Number Of Ingredients 10

2 cups dry black beans
1 ham bone
6 cups water
4 cups chicken broth
1 tablespoon salt
2 tablespoons vegetable oil
½ onion, chopped
1 tomato, diced
½ cup chopped ham
1 tablespoon distilled white vinegar

Steps:

  • Simmer beans, water, ham bone, broth, and salt for 1 1/2 hours.
  • Discard ham bone. Puree about 1/2 of soup; pour back into pot.
  • Saute onion, tomato, and meat in oil until onion is soft. Stir in vinegar, and then add mixture to beans. Simmer for 20 minutes. Serve hot.

1 tablespoon olive oil
1 large onion, chopped
1 stalk celery, chopped
2 carrots, chopped
4 cloves garlic, chopped
2 tablespoons chili powder
1 tablespoon ground cumin
1 pinch black pepper
4 cups vegetable broth
4 (15 ounce) cans black beans
1 (15 ounce) can whole kernel corn
1 (14.5 ounce) can crushed tomatoes

Steps:

  • Heat oil in a large pot over medium-high heat. Saute onion, celery, carrots and garlic for 5 minutes. Season with chili powder, cumin, and black pepper; cook for 1 minute. Stir in vegetable broth, 2 cans of beans, and corn. Bring to a boil.
  • Meanwhile, in a food processor or blender, process remaining 2 cans beans and tomatoes until smooth. Stir into boiling soup mixture, reduce heat to medium, and simmer for 15 minutes.

  • Place the beans in a bowl or pot, cover with cold water, and allow to soak overnight *OR* add beans to a medium pot and cover with hot water. Bring to a boil, then boil for 2 minutes. Turn off the heat, cover the pot and allow the beans to sit for 1 hour. Drain the beans and rinse them with cold water. In a medium pot, add beans, chicken stock, water, onions, and bell peppers.
