1 cup canned black beans, rinsed and drained
1/4 cup finely chopped sweet red pepper
2 tablespoons finely chopped red onion
2 tablespoons minced fresh cilantro
2 tablespoons orange juice
1 tablespoon finely chopped jalapeno pepper
1 tablespoon lime juice
1/8 teaspoon ground cumin
Dash salt

  • In a small bowl, combine all ingredients. Refrigerate until serving.

2 (15 ounce) cans black beans, drained and rinsed, or more to taste
2 avocados - peeled, pitted, and cubed
2 yellow mango - peeled, pitted, and cubed
2 tomatoes, chopped, or more to taste
½ red onion, chopped
¼ cup chopped fresh cilantro, or to taste
2 lemons, juiced
salt and ground black pepper to taste

Steps:

  • Combine black beans, avocados, mango, tomatoes, red onion, and cilantro in a large bowl. Pour lemon juice on top and season with salt and pepper. Mix until well combined.

To dice a whole mango, stand the fruit upright on a work surface so that them stem end faces up. Cut straight down about an inch to one side of the stem, grazing one side of the fibrous pit.
