One of the ways I learned to differentiate sour from bitter - is to dilute the coffee. Brew it. If you're confused as to whether it's sour/bitter - dilute it with water.

I think the most important thing to do is to control your variables as much as possible. Keep water temp, brew time, agitation, and pressure the same but adjust grind size to get it close to the sweet spot.
