- In a large bowl, combine bison, Worcestershire sauce, shallot, garlic, salt, pepper, coriander, and ground mustard. Form into 8 patties that are slightly larger than your hamburger buns. Let sit at room temp for 30 minutes. In a large skillet over medium heat, melt butter. Add onions and cook, stirring occasionally, until golden, 20 minutes. Remove from skillet and place on a plate and tent with foil to keep warm. Return skillet to heat and cook patties for 3 minutes, flip, add cheese and cook for 3 more minutes for medium. Work in batches as necessary. Place patties on a cutting board and let rest 5 minutes. In a small bowl, combine mayonnaise, Dijon mustard, and oregano. Spread mixture on bottom buns, top with romaine, burgers, caramelized onions, and top buns.

- Remove your frozen burger patties from the plastic packaging.
- Using a metal spatula, split the patties apart from each other.
- Add oil to a cast-iron pan set to medium-high.
- Season each side with salt and pepper. Note: allowing just a couple of minutes to thaw will help the seasonings stick.
- Place frozen, seasoned patties onto the hot cast-iron pan.
- Cook 3-5 minutes on each side, then flip.
- Continue flipping until a nice crust has formed — about 15 minutes.
- Remove from the pan and serve on your favorite bun!

If you like cheese on your burgers, add it during the last minute of cooking, then cover to melt. Alternatively cook on the grill: Preheat your grill over medium-high heat, 400 to 425˚. Oil the grill grates. Place the patties on the grill over direct heat. Cook for 4 to 5 minutes per side, covered, or until the internal temperature reads 165˚. If you like cheese on your burgers, add during the last minute of cooking, then cover to melt. Serve immediately on toasted buns with whatever toppings you like!
