Deep South Dish: Butter Swim Batter Biscuits image

A super-easy, homemade, buttermilk batter biscuit, baked in a pool of butter. No kneading, no rolling pin and no cutting necessary! Just pour the batter in a baking dish, score into nine squares and bake.

Number Of Ingredients 6

DRAFT 2ND COPY
1/2 cup (1 stick) salted butter
2 1/2 cups self-rising flour (White Lily brand recommended)
1/2 tablespoon granulated sugar
1 teaspoon baking soda
2 cups buttermilk

Steps:

  • Preheat oven to 450 degrees F. Place butter in a 9-inch glass baking dish and place into oven just long enough to melt.
  • In a large bowl, whisk together the self-rising flour, sugar and baking soda.
  • Using a fork, stir in the buttermilk until a loose batter is formed. Let rest 5 minutes.
  • Pour batter over the butter in the baking dish and use a spatula to swirl and spread across bottom of dish, allowing some of the butter to spill over to the top of batter.
  • Score the batter with a sharp knife for 9 squares and bake for about 20 to 25 minutes, or until golden brown and top is springy.
  • Let rest 5 minutes before slicing with a sharp knife at the score markings.

Number Of Ingredients 9

4 tablespoons butter
1/3 cup honey
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 teaspoon cream of tartar
1/2 cup cold butter, diced
2/3 cup milk

Steps:

  • Preheat oven to 450 degrees. Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, salt, sugar and cream of tartar. Cut in butter until the mixture resembles cornmeal. Add the milk and mix well. Knead dough about 15 times.
  • Divide dough into 1/4 cup size portions. Roll into balls and place on prepared baking sheet. Pat to about 1/2 inch thickness.
  • In a medium saucepan, combine ingredients for honey butter. Bring to a boil, then remove from heat. Brush biscuits with a thin layer of honey butter.
  • Place in oven and bake for 10-12 minutes, or until golden brown. Remove from oven and brush immediately with more honey butter before serving warm.

    Bake for 12-14 minutes, depending on the size of your biscuits, until golden brown at the edges. Remove from the oven and transfer to a wire rack to cool.
