In my opinion, it has just the right combination of ginger, cinnamon and cloves. These cookies will puff up in the oven and make you think the end result is going to be a big soft (cake-like) cookie. Not so! After the proper length of baking time (mine needed the full 10 minutes) they will flatten, crinkle up a bit and end up being soft and chewy.
