This recipe has the great flavor of a Big Mac and adds the benefits of low carb

1/2 pound ground beef
1/4 tsp Onion powder
1/4 tsp garlic powder
4 cups romaine lettuce, chopped
1/2 cup Shredded Cheddar Cheese
1/4 cup dill pickles (diced)
1/4 cup Yellow Onion (diced)
salt and pepper (to taste)
Sesame Seeds (to garnish)
1/4 cup mayonnaise
2 tbsp no sugar added ketchup
2 tsp pickle juice
1 tsp yellow mustard
1 tsp distilled white vinegar
1/4 tsp Onion powder
1/4 tsp Paprika

Steps:

  • Add the meat to a skillet and break it using a wooden spoon. Cook the beef all the way through, stirring occasionally.
  • Season with salt and pepper to taste, and add the onion powder and garlic powder.
  • Divide the lettuce between 2 salad bowls, about 2 cups of lettuce in each bowl.
  • Layer the other ingredients on top of the lettuce. Start with the beef, then add the onions and pickles, and sprinkle the cheese on top.
  • To make the sauce, take all sauce ingredients and mix together in a bowl
  • Drizzle 2-3 tablespoons of sauce on each bowl. You can either toss the salad or keep it layered as is.
  • Garnish with sesame seeds on top, and serve immediately

16 ounces cavatappi pasta, cooked, drained, and rinsed in cool water
1 1/2 cups cubed cheddar or Colby-jack cheese
1 1/2 cups halved grape tomatoes
1 cup thinly sliced red onion
1 pound ground beef, browned
1 1/2 cups shredded romaine lettuce
1 cup chopped dill pickles
3/4 cup mayonnaise
3/4 cup sour cream
2 teaspoons French dressing
1/4 cup plus 2 tablespoons sweet pickle relish
2 teaspoons classic yellow mustard
1 tablespoon finely minced onion
1 1/2 teaspoons distilled white vinegar
1 1/2 teaspoons granulated sugar
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon garlic powder

Steps:

  • In a large salad bowl, toss together cooled pasta, cubed cheese, tomatoes, red onion, ground beef, romaine, and pickle chunks.
  • In a small mixing bowl, whisk together all of the Big Mac Sauce ingredients. Pour dressing over the pasta salad ingredients and stir to coat evenly with the sauce.
  • Serve immediately or cover with plastic wrap and chill in the refrigerator for 1-2 hours before serving.
