1½ tbsp sesame oil
1 red onion , cut into thin wedges
160g mangetout
70g baby corn , halved
2 baby pak choi , quartered
3 spring onions , sliced
1 large garlic clove , crushed
½ tbsp mild curry powder
4 tsp low-salt soy sauce
300g ready-to-cook udon noodles
1 tbsp pickled sushi ginger , chopped, plus 2 tbsp of the brine

Steps:

  • Heat the oil in a non-stick frying pan or wok over a high heat. Add the onion and fry for 5 mins. Stir in the mangetout, corn, pak choi and spring onions and cook for 5 mins more. Add the garlic, curry powder and soy sauce, and cook for another minute.
  • Add the udon noodles along with the ginger and reserved brine, and stir in 2-3 tbsp hot water until the noodles are heated through. Divide between bowls and serve.

smooth peanut butter

3 tbsp.

soy sauce

2 tbsp.

sesame oil

1 tbsp.

honey

1 tbsp.

lime juice

1

clove garlic, minced

2 c.

Shredded chicken

2 c.

broccoli florets, steamed

2

avocados, thinly sliced

2

green onions, thinly sliced

1 tsp.

sesame seeds

Steps:

  • In a large pot of salted boiling water, cook noodles according to package instructions. Drain noodles and rinse with cold water to cool. Return noodles to saucepan. Add peanut butter, soy sauce, sesame oil, honey, lime juice and garlic. Stir until sauce is creamy and noodles are fully coated. If the sauce is too loose, turn heat to low and cook until the sauce has thickened, about 1 minute. Divide noodles between bowls. Top each serving with chicken, broccoli, avocado and green onions. Garnish with sesame seeds and serve warm or at room temperature.
