Steps:

Heat oven to 200C/fan 180C/gas 6. In a large bowl, toss the sweet potato chips with oil and soy sauce. Transfer to a shallow roasting tin and season with black pepper and nutmeg, if you like. Bake for 30-40 mins, until crisp.

2 tablespoons canola oil
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon taco seasoning
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
DIP:
3/4 cup mayonnaise
1/2 cup sour cream
2 ounces cream cheese, softened
4-1/2 teaspoons minced fresh cilantro
1-1/2 teaspoons lemon juice
1/2 teaspoon celery salt
1/8 teaspoon pepper

Place sweet potatoes in a large bowl; cover with cold water. Let stand 20 minutes. Drain; pat dry. , Preheat air-fryer to 360°. In a small bowl, mix oil and seasonings; drizzle over potatoes and toss to coat., In batches, arrange sweet potatoes in a single layer in greased air fryer.
