Steps:
- In a large pot, add sausage and cook until browned and cooked through. Drain grease and add flour to sausage. Cook over medium-high heat until the sausage is well-coated with the flour. Add milk and stir until desired thickness and add salt and pepper, to taste. Serve with biscuits.

- Preheat oven to 375º and spray a baking dish with cooking spray. In a large skillet over medium heat, heat oil. Add sausage and cook, breaking up with the back of a spoon, until no longer pink. Sprinkle flour over sausage and stir to combine. Pour over milk and bring to a simmer. Season with salt, pepper and cayenne and cook until thick, 3 minutes. Set aside. Flatten each biscuit round about 1/4” thickness. Top each round with sausage gravy. Bring edges of dough together and pinch to seal. Place in prepared baking dish seam side-down. Brush with egg wash and sprinkle with chives and a pinch more of cayenne. Bake until biscuits are nicely golden, 22 to 24 minutes. Serve warm.
