large carrots, peeled and sliced into coins

1

stalk celery, chopped

Kosher salt

Freshly ground black pepper

cloves garlic, minced

1 tbsp.

all-purpose flour

1 1/2 lb.

boneless skinless chicken breasts

3

sprigs fresh thyme

1

bay leaf

3/4 lb.

baby potatoes, quartered

3 c.

low-sodium chicken broth 

Freshly chopped parsley, for garnish

Steps:

  • In a large pot over medium heat, melt butter. Add carrots and celery and season with salt and pepper. Cook, stirring often, until vegetables are tender, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add flour and stir until vegetables are coated, then add chicken, thyme, bay leaf, potatoes, and broth. Season with salt and pepper. Bring mixture to a simmer and cook until the chicken is no longer pink and potatoes are tender, 15 minutes. Remove from heat and transfer chicken to a medium bowl. Using two forks, shred chicken into small pieces and return to pot.  Garnish with parsley before serving.

2 tbsp olive oil
500g skinless boneless chicken thighs
1 red pepper , cut into chunky pieces
1 large onion , sliced
2 garlic cloves , chopped
1 tbsp white wine vinegar
1 tbsp smoked paprika
400ml chicken stock
large handful black olives (such as couchillo)
50g flaked almonds , toasted
cooked rice or crusty bread, to serve

Steps:

  • In a large saucepan, heat 1 tbsp of the oil. Season the chicken and brown on both sides for 7-8 mins until golden, then set aside on a plate. Put the remaining 1 tbsp oil in the pan with the pepper, onion and garlic. Fry on a medium heat for 8 mins or until slightly golden. Add the vinegar and cook for 1 min.
  • Return the chicken to the pan with the paprika and stock. Bring to the boil, then turn down to simmer for 25 mins until the chicken is cooked through. Add the olives and almonds, and serve with rice or crusty bread.
