- In a large skillet, saute the onion and, if desired, mushrooms and peppers in 3 tablespoons oil until tender. Remove and keep warm. In the same pan, saute beef in remaining oil in batches for 45-60 seconds or until meat reaches desired doneness., On each roll bottom, layer the beef, onion mixture, cheese and, if desired, ketchup. Replace tops.

- 1. Fill a big mixing bowl with cool water. 2. Peel the potatoes with a potato peeler.3. Cut the potatoes into medium size cubes. You do this by cutting each potato lengthwise 3 times, then widthwise 4-5 times. 4. Place the potatoes in the bowl of water immediately after cutting them so they don’t turn brown.5. Once you’re done, place the potatoes in a large size pot and cover them with cool water or broth.6. Place the pot over high heat and boil the potatoes for 50 minutes or until they’re very tender. 7. Once potatoes are tender, place them in a colander to strain the water or broth, then clean the pot.8. Place the same pot over medium heat, then add in the butter, milk, cheese, seasonings, and stir well. 9. Let everything simmer for 8 minutes, stirring periodically (If you didn’t use cheese, let the milk & butter simmer until the butter melts).10. Add the potatoes to the pot.11. Stir, mash, and whisk them for about 5 minutes, and let them cook until they’re as thick as you like!
