1 boneless pork shoulder (about 4 pounds), skin on
4 garlic cloves, smashed
1 handful fresh oregano
4 tablespoons Kosher salt (1 tablespoon for every pound of meat)
1 tablespoon coarsely ground black pepper
3 tablespoons vegetable oil
2 tablespoons white wine vinegar

Steps:

  • Place the pork, fat-side up, in a roasting pan fitted with a rack insert, and using a sharp knife, score the surface of the meat with small slits. Mash the garlic, oregano, salt, and pepper into a paste on a cutting board with the flat side of a knife; place the adobo in a bowl and stir in the oil and vinegar. Rub the garlic paste all over the pork, being sure to get into the incisions so the salt can penetrate the meat and pull out the moisture - this will help form a crust on the outside when cooked. Cover the pork with plastic wrap and marinate in the refrigerator for at least 3 hours or up to overnight.
  • Allow the meat to sit at room temperature for 30 minutes before cooking. Preheat the oven to 350 degrees F.
  • Roast the pork for 3 hours, uncovered, until the skin is crispy-brown. Let the meat rest on a cutting board for 10 minutes before slicing.

Nearly every family in Puerto Rico, the Dominican Republic, and Cuba has their own way of roasting pork for the holidays. This Puerto Rican-inspired pernil recipe is almost always served with arroz con gandules (rice with pigeon peas), and the chicharrón (crispy skin) is heartily fought over. If you can’t find Sazón, you can use any other seasoning salt, preferably one with a Latin American flavor profile. And if on the off-chance you have any pork left over, use it to make the best sandwiches you’ve ever tasted.

2 ripe plum tomatoes, cored, coarsely chopped (about 1½ cups)
1 medium onion, coarsely chopped (about 1 cup)
2 Cubanelle peppers, seeds removed, coarsely chopped (about 1 cup), or 1 medium green bell pepper, ribs and seeds removed, coarsely chopped
1 medium red bell pepper, ribs and seeds removed, coarsely chopped (about 1 cup)
1 large bunch cilantro, coarsely chopped (about 1 cup)
1 head of garlic, cloves separated, peeled
1 Tbsp. black peppercorns
2 heads of garlic, cloves separated, peeled
2 1.4-oz. packets Sazón con Culantro y Achiote (such as Goya)
½ cup Diamond Crystal or ¼ cup plus 1½ tsp. Morton kosher salt
2 Tbsp. dried oregano
2 Tbsp. white wine vinegar
2 Tbsp. extra-virgin olive oil, plus more for brushing
1 8–10-lb. skin-on, bone-in pork shoulder
Arroz con Gandules (for serving)
A spice mill or mortar and pestle

Steps:

  • Purée tomatoes, onion, Cubanelle peppers, bell pepper, cilantro, and garlic in a food processor until smooth. Scoop out ½ cup soffritto and set aside. Reserve remaining soffritto for another use (you can use it for the arroz con gandules).
  • Do Ahead: Soffritto can be made 3 days ahead. Transfer to an airtight container, cover, and chill, or freeze up to 3 months.
  • Finely grind peppercorns in spice mill or with mortar and pestle. Transfer to a food processor. Add garlic, Sazón, salt, oregano, vinegar, 2 Tbsp. oil, and reserved ½ cup soffritto and purée until smooth.
  • Push a small paring knife (about 3½" long) into pork through the skin, working the blade all the way in; twist knife to make a small hole in the meat. Repeat, making holes spaced about 1½" apart on all sides of pork.
  • Rub pork all over with adobo mixture, pushing into holes and covering any exposed meat and skin. Try to get as much adobo mixture into meat and not just on the surface, where it may burn when roasting. Be sure to use all of it! Wrap pork tightly and chill at least 3 hours and up to 3 days.
  • Place a rack in lower third of oven; preheat to 300°. Line a large roasting pan with 2 layers of heavy-duty foil. Place a roasting rack on top. Set pork, skin side up, on rack. Scrape any adobo mixture off skin and thoroughly pat dry with paper towels. Liberally brush cleaned skin with oil. Transfer pan to oven and carefully pour 2 cups water into pan. Roast pork until an instant-read thermometer inserted into thickest part of shoulder registers 180°, meat is pulling away from bone, and skin is crisp, 5–6 hours.
  • Let pork sit, uncovered, at room temperature at least 30 minutes and up to 5 hours.
  • Before serving, preheat oven to 500° and reheat roast until skin crisps (don’t let it take on any more color), 5–10 minutes.
  • Remove chicharrón (crispy skin) and cut or break into smaller pieces. Slice pork and transfer to a platter. Serve with chicharrón and arroz y gandules alongside.

  • Prepare wet adobo rub: Place the garlic cloves and salt in a mortar and pestle (the salt keeps the garlic from flying around) and pound them to a paste. Add the peppercorns and oregano, pounding each into the mix before adding the next. Stir in the olive oil and vinegar. This is best used when freshly made. Marinate the roast up to 3 days before you plan to cook it: Make several slits about 2 inches apart and 1 1/2 inches long through the skin of the roast and into the meat, going halfway through the roast (unless you hit the bone). Wiggle your finger in the slits to make them easier to fill. (Although the adobo isn't spicy, you may find that a pair of latex gloves comes in handy for this.) Fill each slit with adobo, coaxing as much as you can into each with the help of an espresso spoon or small teaspoon. Turn the roast, and do the same on all sides. If you have adobo left over, rub it all over the outside of the roast. Refrigerate, covered, for at least 1 day, or up to 3 days. Preheat the oven to 450° F. Set the roast skin side up on a rack in a roasting pan. Roast for 1 hour. Turn the heat down to 400° F and roast until the skin is deep golden brown and crackly and there is no trace of pink near the bone, at least 2 hours. An instant-read thermometer inserted into the thickest part of the roast should register 150° F; to be sure, check the roast in a few spots. Let the roast rest for at least 15 minutes before carving. To serve, removes the crispy skin. It will pull right off in nice big pieces. Cut them into smaller pieces (kitchen shears work well for this) and pile them up on the center of the serving platter. Carve the meat parallel to the bone all the way down to the bone. (It will get trickier to carve neat slices as you get near the bone; don't let that bother you.)

Puerto Rican cazuela, a richly spiced crustless pie with a texture between thick custard and bread pudding, is a unique dessert with a complex history. The name means “cooking pot” in Spanish, and the key ingredients — batata (white sweet potato), pumpkin and coconut milk — and the traditional cooking process speak to the island’s African ancestry. Flavored with ginger, cloves, cinnamon and anise, this dish also includes spices brought to the Caribbean during the spice trade. Cazuela has been prepared since at least the 19th century, and today it’s largely reserved for holidays. This version is an adaptation of the classic, with sweet plantain added for flavor, and a tip for using canned ingredients. While this dessert may seem challenging at first glance, it is incredibly adaptable and can be prepared days in advance in a casserole dish, ramekins or even foil cupcake tins.
