Best Pasta Carbonara Recipe - How to Make Pasta Carbonara image

Ree Drummond's delicious recipe for Pasta Carbonara couldn't be easier to make. It's also the perfect dish to make for your family during the colder months.

12 oz. pasta, any variety
8 pieces thick cut bacon (diced small)
1/2 whole medium onion, diced small
2 cloves garlic, minced
3 whole eggs
3/4 c. finely grated Parmesan
3/4 c. heavy cream
Salt and plenty of black pepper
1/2 c. peas

Steps:

  • Cook pasta according to package directions. 
  • While the pasta is cooking, fry the bacon until just barely crisp. Remove from the pan and drain on paper towels. Pour off all of the bacon grease, but don't clean the pan. Return the pan to the stove over medium-low heat and throw in the onions and garlic. Cook until golden brown. Set aside. 
  • In a bowl, mix together eggs, Parmesan, cream, and salt and pepper until smooth. 
  • When the pasta is done, reserve a cup or two of the pasta water. Drain the pasta and place it in a bowl. While the pasta is still really hot, slowly drizzle in the egg mixture, stirring the pasta the whole time. The sauce will become thick and should coat the pasta. Splash in a little hot pasta water if needed for consistency.
  • Halfway through, add the peas, bacon, and sauteed onion/garlic. Finish adding the sauce, stirring until it's all combined. 
  • Serve immediately with extra Parmesan. Delish!

Kosher salt
12 oz. spaghetti
3 large eggs
1 c. freshly grated Parmesan, plus more for serving
8 slices bacon
2 cloves garlic, minced
Freshly ground black pepper
Extra-virgin olive oil (optional), for serving
Flaky sea salt (optional), for garnish
Freshly chopped parsley, for garnish

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente according to package directions. Reserve 1 cup pasta water before draining.
  • In a medium bowl, whisk eggs and Parmesan until combined. 
  • Meanwhile, in a large skillet over medium heat, cook bacon until crispy, about 8 minutes. Reserve fat in skillet and transfer slices to a paper towel–lined plate to drain. Break into bite-size pieces. 
  • Add garlic to skillet and cook until fragrant, about 1 minute. Add cooked pasta and toss until fully coated in bacon fat. Remove from heat. Pour over egg-and-cheese mixture and stir vigorously until creamy (being careful not to scramble eggs). Add pasta water a few tablespoons at a time to loosen sauce. 
  • Season generously with salt and pepper and stir in cooked bacon.
  • Drizzle with oil and garnish with flaky sea salt (if using), Parmesan, and parsley before serving.

SPRING GREEN SPAGHETTI CARBONARA RECIPE | INA GARTEN ...
In 2018, I was working on a cookbook that I knew would be published in October 2020, one month before a contentious election. I thought, no matter what side of the political aisle you were on, you were going to be seriously stressed. (Little did I know that there would also be a global pandemic.) That’s when I decided to make the cookbook all about comfort food. I wanted to include recipes for classics like tomato soup and grilled cheese sandwiches but to make them fresher, more delicious and easier to prepare. That’s why I called my cookbook Modern Comfort Food. This Spring Green Spaghetti Carbonara is the essence of that idea. Classic pasta carbonara is made with lots of eggs, cheese and pancetta. It’s delicious but it’s also pretty rich. I lightened it up by adding fresh spring vegetables like snow peas, asparagus and English peas plus lots of scallions and chives. I also find that the classic dish doesn’t have that “edge” that I like — a vinegary or tart flavor that really makes all the other ingredients pop — so I added the zest and juice of a whole lemon. Don’t worry; I kept all the pancetta and lots of freshly grated Parmesan cheese! This is a delicious dinner: a classic Italian dish, updated, and so comforting on a cold night!

  • While the pancetta cooks, fill a large bowl with the hottest tap water and set aside to heat the bowl. Just before you drain the pasta, pour the water out of the bowl. Put the cream, eggs, egg yolks and 1/4 cup of the reserved pasta water into the bowl and whisk to combine. Immediately, add the hot pasta and vegetables and toss with tongs for a full minute or two, until the pasta absorbs the sauce. Add enough reserved hot pasta water to keep the sauce creamy. Add the 3/4 cup Parmesan, the scallions, chives, lemon zest and juice, 1 tablespoon salt and 1 teaspoon pepper and toss well. Add the pancetta, sprinkle with salt and serve hot sprinkled with extra chives and Parmesan.
