Easy Melt Mac-n-Cheese (Great Value Recipe) image

"THis is from the Great Value Easy Melt cheese box. Easy Melt is Great Value's equivalant of Velveta Cheese. You can get it at Walmart. This is a very tasty combo and very easy to make. I melt the cheese in a sauce pan while the macaroni is cooking, that allows it to be mixed better when the mac is done."

Number Of Ingredients 8

2 cups Uncooked Elbow Macaroni
16 ounces Easy Melt Cheese Diced
1/3 cup Milk I use Skim, but you can use 2%, or Whole milk instead.
Options
3 hot dogs sliced or diced
1 cup Broccoli Florets chopped
1 pound Ground beef cooked and drained
1/2 cup shredded cheese Get the Finely Shredded mixture.

Steps:

  • "Cook the Macaroni per it's instructions. (normally it takes between 9 to 11 minutes at boiling to get the Macaroni tender. Do not overcook) Drain the pasta and return it to the pot. (or serving bowl, or warmer, for larger orders) While the pasta is cooking, place the diced cheese and milk in a heavy sauce pan (medium size) and heat on Medium. Stir constantly to ensure proper melting and to keep it from burning. Th cheese and macaroni should be done about the same time, if the cheese is done first, reduce the heat to low and stir occasionally to keep from burning. Pour the cheese over the macaroni and mix thouroghly. For an extra cheesy mouth watering taste sensation, sprinkle some shredded cheese ofer the mixture and stir it in. OPTIONS: You can serve it as is, or add a little something to it. Some of the things I like to add on occasion are hot dogs, broccoli, or ground beef. (With the ground beef I add 1/2 cup of diced onions when cooking the beef.)"

There's not much that we wouldn't put this cheesy concoction on, but it's especially perfect mixed with al dente pasta, then baked with breadcrumbs on top.

Number Of Ingredients 7

2 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 cup 2% or whole milk
1 cup low-sodium chicken or vegetable stock
1 tablespoon Dijon mustard
2½ cups extra-sharp yellow cheddar
shredded

Steps:

  • In a large saucepan, melt butter over medium-high heat
  • Once the butter has melted, whisk in flour and cook until it begins to smell nutty and fragrant, about 45-60 seconds
  • Whisk in milk and stock, and continue whisking vigorously until flour and butter have dissolved
  • Bring to sauce to a bubble and thicken, about 3-4 minutes
  • Once sauce is thick, remove from heat and mix in mustard and cheddar cheese
  • Stir until cheese is completely melted

  • Bring a large pot of salted water to a boil.  In a medium pot over medium heat, melt butter. Add flour and cook until golden and smells nutty, about 1 minute. Slowly add milk while whisking. Continue whisking until no lumps remain and mixture thickens, 1 to 2 minutes more.  Add cream, ground mustard, and cayenne and season with salt and pepper. Let simmer for 2 minutes, then turn off heat and whisk in cheese until completely melted.  Add pasta to boiling water and cook according to package directions. Reserve about ½ cup pasta water, then drain.  Add 1/4 cup pasta water to cheese sauce and stir to combine. Add cooked pasta and stir to coat. Add more pasta water, a tablespoon at a time, to loosen sauce as necessary.
