- Preheat oven to 350°. Crumble chorizo into a 10-in. cast-iron or other ovenproof skillet; add corn, red onion and pepper. Cook over medium heat until meat is fully cooked, 6-8 minutes; drain. Stir in the cheeses., Bake until bubbly, 14-16 minutes. Sprinkle with tomato and green onions. Serve with chips.

If you can't find salmon that's smoky enough, I found that adding a little hickory liquid smoke to the mix works perfectly to flavor the spread so that it tastes like Dave's version. You'll end up with twice the amount of spread as the original which makes this a great appetizer for a small party. You can even prepare the flatbread ahead of time, then wrap it up in foil and reheat it in the oven before serving. Menu Description: "Our famous Big Boy soups and chili are made fresh daily from fresh vegetables, pure cream and only the finest ingredients."
