Easy Gingerbread Recipe {Gingerbread Cake ... - CakeW… image

Quick and easy gingerbread recipe, made with simple ingredients. This old fashioned, classic gingerbread cake is soft, moist, loaded with molasses & spices.

1/2 cup Butter (Unsalted)
1/2 cup Brown sugar
1 cup Molasses (Unsulphered)
1 Egg (Large)
2.5 cups All-purpose flour
1.5 tsp Baking soda
2 tsp Ginger powder
1 tsp Cinnamon powder
1/2 tsp Cloves powder
1 cup Water (Boiling hot)
1 cup Cream cheese frosting (Or whipped cream)

Steps:

  • In a large mixing bowl, cream together butter and sugar.
  • Add molasses and egg and mix until smooth. 
  • In a separate mixing bowl, whisk together the flour, baking soda, ginger, cinnamon and cloves. 
  • Dump this dry mixture into the wet mixture and mix until just combined. 
  • Add water very carefully and mix until smooth. Don't burn yourself!
  • Pour batter in a greased and floured square pan (Dimensions 9x9). 
  • Bake at 350 degrees for 40-45 minutes or until an inserted toothpick in the center comes out clean. 
  • Allow it to cool down. Then, cut square slices.
  • Top off each piece with a swirl of cream cheese frosting or whipped cream and enjoy!

3 large egg whites
3/4 cup sugar
Pinch of salt
1/3 cup water
1/4 teaspoon pure vanilla extract

Steps:

  • In a heatproof bowl set over (not in) a saucepan of simmering water, combine egg whites, sugar, salt, and water. Cook over medium, stirring constantly, until sugar has dissolved (or mixture registers 150 degrees on an instant-read thermometer), 2 to 3 minutes. Transfer to a large bowl. Using an electric mixer, beat on medium-high until glossy, stiff peaks form (do not overbeat), about 3 minutes; reduce speed to low, add vanilla extract, and beat just until combined. Use immediately.
