Best Beef and Broccoli Recipe | Allrecipes image

I've had this recipe for years. It's a great way to use leftover beef or you can buy an inexpensive cut and do it from scratch. My kids love it because of the soup. Tenderize the steak with a mallet prior to cooking, if desired.

1 tablespoon olive oil
1 pound round steak, thinly sliced into 2 inch pieces
salt to taste
ground black pepper to taste
1 large onion, thinly sliced
2 cups fresh broccoli florets, chopped
1 (10.75 ounce) can condensed cream of broccoli soup
¼ cup water
3 tablespoons soy sauce

Steps:

  • In a large skillet, heat the olive oil over high heat. Stir in the steak and season with salt and pepper. Cook until beef is almost completely browned.
  • Stir in onions and saute until tender. Stir in broccoli, condensed cream of broccoli soup, water and soy sauce. Blend well.
  • Reduce heat and cover. Cook to desired doneness.

boneless skinless chicken breasts

5 c.

chicken broth

3/4 lb.

peeled baby potatoes, cut into1/4" cubes

1

large head of broccoli, cut into small florets

1

onion, chopped

kosher salt

Freshly ground black pepper

1/4 c.

flour

1 c.

heavy cream

1 1/2 c.

shredded Cheddar, plus more for garnish

1/2 c.

grated Parmesan

Sour cream, for serving

Steps:

  • Combine chicken breasts, chicken broth, potatoes, broccoli and onion in the bowl of a Crock-Pot. Season with salt and pepper and stir. Cover pot and cook on low for 5 to 6 hours, until the chicken is cooked through. Remove chicken from Crock-Pot and transfer to a large bowl. Using two forks, shred into bite-size pieces. In a medium bowl, whisk together flour and cream. Pour mixture into Crock-Pot and stir to combine. Return chicken to Crock-Pot and add cheddar and Parmesan. Turn heat to high, cover and cook for 30 minutes more, or until the cheese has melted and the soup has thickened. Taste for seasoning and add more salt and pepper if necessary. Ladle into soup bowls and serve immediately. Garnish with sour cream and more cheese.

    1. Fill a large pan with water, add a tiny pinch of salt and bring to the boil over a high heat.
    2. Meanwhile, on a chopping board, cut the florets from the broccoli, then cut or break them into bite-sized pieces.
    3. Trim and cut the stalk in half, then finely slice it.
    4. Once boiling, use a slotted spoon to carefully lower the broccoli into the water.
    5. Cook for 3 to 4 minutes, or until tender – you should be able to poke the tip of a knife easily into the florets.
    6. Drain over the sink into a colander, then leave to steam dry for a minute.
    7. Tip back into the pan, then sprinkle with a tiny pinch of salt and pepper.
    8. Add the butter and toss to coat, then tip into a serving bowl and serve.
