Banana-Berry Brownie Pizza Recipe: How to Make It image

"I like to make this dessert in June and early July so I can use fresh local strawberries," writes Tina Jacobs from Wantage, New Jersey. "The fruit lightens up the rich chocolate taste and pleases everyone."

1 package fudge brownie mix (13-inch x 9-inch size)
1/3 cup boiling water
1/4 cup canola oil
1 large egg, room temperature
TOPPING:
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2 cups sliced fresh strawberries
1 to 2 medium firm bananas, sliced
1 ounce semisweet chocolate, melted

Steps:

  • In a large bowl, combine the brownie mix, water, oil and egg until well blended. Spread into a greased and floured 12-in. pizza pan. Bake at 350° for 25 minutes., In a large bowl, beat the cream cheese, sugar, egg and vanilla until smooth. Spread over brownie crust. Bake 15 minutes longer or until topping is set. Cool on a wire rack., Just before serving, arrange strawberries and bananas over topping; drizzle with chocolate. Refrigerate leftovers.

Flour, for the parchment
1 (16-oz.) package refrigerated sugar cookie dough
2 tbsp. Strawberry jam
2 tbsp. fresh lemon juice
1 lb. strawberries, hulled and cut into pieces
1 1/2 c. blueberries
1 (8-oz.) package cream cheese, at room temperature
1/4 c. confectioners' sugar
2 c. refrigerated whipped topping (we used Cool Whip)

Steps:

  • Heat oven to 350 degrees F. Lightly flour a piece of parchment paper. Shape the cookie dough into a disk, then roll out on the parchment into a 12" circle or three 1/4"-thick circles. Slide the parchment (with cookie dough) onto a baking sheet. Bake until lightly golden brown, 15 to 18 minutes. Transfer the cookie (still on parchment) to a wire rack and let cool for at least 15 minutes. Meanwhile, in a large bowl, whisk together the jam and lemon juice. Add the berries and toss to coat. Using an electric mixer, beat the cream cheese and sugar in a large bowl until smooth, about 1 minute. Add the whipped topping and beat to combine. Spread the cream cheese mixture onto the cooled cookie, leaving a 1/2" border. Top with the berry mixture.
