Sticky pork belly with Vietnamese-style salad & sma… image

Flavour pork with hoisin, honey, soy and ginger and serve with a crunchy cucumber, radish and herb salad with zesty chilli dressing

600g pork belly
6 tbsp hoisin sauce
3 tbsp clear honey
3 tbsp rice vinegar
3 tbsp soy sauce
4 tbsp tomato ketchup
2.5cm piece ginger , peeled and finely chopped
Coconut rice , to serve (see see tip, below)
¼ cucumber , cut into ribbons using a vegetable peeler
6 radishes , sliced
75g sugar snap pea , halved horizontally
2 spring onions , thinly sliced
2 tbsp mint leaves, large leaves torn
2 tbsp Thai basil , large leaves torn (use coriander if you can't find this)
1 tbsp salted peanut , toasted and lightly smashed in a pestle and mortar
1 small red chilli , finely chopped
½ garlic clove , grated
juice ½ lime (leftover from crab cakes)
1 ½ tsp light brown sugar
1 tbsp rice vinegar

Steps:

  • Remove the rind from the pork and put the meat in a large sealable food bag or casserole dish. In a bowl, mix the hoisin, honey, vinegar, soy, ketchup and ginger, then pour over the pork and massage well. Seal the bag or cover the dish and leave to marinate in the fridge for at least 4 hrs, or overnight.
  • Heat oven to 160C/140C fan/gas 3. Transfer the pork and its marinade to a snug roasting tin, lined with foil. Pour over 50ml water, cover with foil and roast for 2 hrs, or until tender, basting halfway through. Take the pork out and increase oven to 200C/180C fan/gas 6. Remove the foil and pour the sauce into a small pan. Bring the sauce to the boil and let it bubble until thick and syrupy. Brush some of the sauce all over the pork and pop back in the oven, uncovered, for 20 mins until sticky and caramelised in places. Transfer to a chopping board, cover lightly with foil and leave to rest for 20 mins.
  • Meanwhile, prepare the salad. Toss all the ingredients, except the peanuts, together in a bowl. To make the dressing, combine all the ingredients and set aside. Reheat the remaining sauce, adding a splash of water if it has become too thick. Toss the dressing through the salad and divide between 2 plates, then top with the smashed peanuts. Cut the pork into thick slices, arrange alongside the salad, then drizzle over the sauce. Serve with Coconut rice (see tip, below).

Smoked Pork Belly Burnt Ends! - Learn to Smoke Meat with ... image

Here's my own personal take on pork belly burnt ends, how to prepare them, season them with my original rub recipe and smoke them to perfection. I think you are going to be knocked off your feet at how good these are.. brace yer' selves!

Any size pork belly

Steps:

  • Remove the rind from the pork belly using a sharp knife.
  • Place the pork belly in the freezer for 30 minutes to allow the fat to get really solid so it will cut more easily.
  • With the pork belly laying in front of you on a cutting board, slice the pork belly into pieces that are about 1.5 inches wide. Further cut the slices into pieces that are 1.5 inches wide giving you cubes of meat that are 1.5 x 1.5 inches square. 
  • Place ⅓ cup of Jeff's original rub into a zip top back and then place 2 lbs of meat into the bag. Shake and massage bag to coat the meat with the rub. Pour the coated pieces of meat out onto a cutting board or bowl.
  • Arrange the pieces of meat onto a cooling rack, Bradley rack or Weber grill pan to make them easy to move into and out of the smoker. 
  • Set up your smoker for cooking at about 225-240 °F using indirect heat. If your smoker has a water pan, fill it up. When the smoker is ready, place the racks of meat onto the smoker grate and quickly close the lid/door. 
  • Let the meat cook and smoke until a crust forms and the bark on the outside of the meat starts to turn to a light mahogany. 
  • Place the meat into a foil pan and coat with about ¼ to ⅓ cup of honey and ¼ to ½ cup of Jeff's barbecue sauce per 2 lbs of meat. Optional, you can omit the barbecue sauce and add 2-3 heaping tablespoons of hot pepper jelly with the honey. Mix the glaze with the meat. 
  • Cover the pan with foil and place back into he smoker for an additional 60-90 minutes or until the meat reaches 200°F. (no smoke required). 
  • When the pork belly burnt ends are finished cooking, remove the foil and let them cool for a few minutes before serving.

    1. Get your meat out of the fridge and up to room temperature before you cook it.
    2. For the stuffing, peel and finely chop the onions, finely slice the pancetta, then place in a large frying pan on a medium-high heat with 6 tablespoons of oil, the butter and fennel seeds. Cook for 5 minutes, stirring regularly, while you finely chop the chicken livers and herb leaves.
    3. Stir the livers into the pan, followed by the herbs and 50ml of wine. Roughly chop and add the dried fruit, along with the pine nuts. Cook and stir for 5 minutes, then remove from the heat and leave to cool.
    4. Finely grate over the Parmesan. Toast the breadcrumbs and use your hands to mix them into the cool stuffing.
    5. Place the pork loin on a board, skin side down, open it out and push it down flat. Season generously with sea salt and black pepper, then pour over and massage in half the Vin Santo.
    6. Scatter over the stuffing, pour over the remaining Vin Santo, then roll up the pork, patting on and compacting the stuffing as you go.
    7. Sit it with the seam underneath and tie with butcher’s string to secure it, then score the skin and into the fat with your knife. Season generously and rub all over with oil.
    8. When you’re ready to cook, preheat the oven to full whack (240ºC/475ºF/gas 9).
    9. Wash the carrots and place in a large roasting tray. Sit the porchetta on top, then pour in 500ml of water and the remaining 325ml of wine.
    10. Place in the hot oven for 30 minutes, then reduce the temperature to 180ºC/350ºF/gas 4 and leave to cook for 4 to 5 hours, or until the meat is really tender, basting now and again.
    11. Remove the porchetta to a board to rest for at least 30 minutes. Meanwhile, place the roasting tray over a medium heat on the hob.
    12. Skim away most of the fat from the surface into a jar, cool, and place in the fridge for tasty cooking another day. Stir the flour into the tray, mashing the carrots and scraping up all those gnarly bits from the base.
    13. Pour in the stock, and simmer until the gravy is the consistency of your liking, stirring occasionally.
    14. Strain the gravy through a coarse sieve, pushing all the goodness through with the back of a spoon, then season to perfection.
    15. Carve up the beautiful porchetta, and serve it as you wish.
