Make perfectly crunchy veggie chips at home with this healthy recipe. Use a mandoline to slice the beets extra-thin for the optimum crunch!

2 large beets (about 1 pound), thinly sliced (about 1/8 inch thick)
1 tablespoon extra-virgin olive oil
½ teaspoon salt

Steps:

  • Preheat oven to 200 degrees F. Line 2 large baking sheets with parchment paper.
  • Toss beet slices with oil and salt. Spread in a single layer on the prepared baking sheets.
  • Bake on the upper and lower oven racks until crisp, rotating the pans top to bottom and front to back halfway through, about 3 hours. Cool on the pans for 30 minutes before serving.

The better alternative to potato chips. Don't throw away the greens! Put them on a cookie sheet and brush with olive oil, salt, and pepper and cook for about 15 minutes at 350 degrees F (175 degrees C).

5 large beets, peeled and thinly sliced
1 tablespoon olive oil, or as needed
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
  • Spread beets out in a single layer on the prepared baking sheet. Brush beets on both sides with olive oil and season with salt and pepper.
  • Bake in the preheated oven for 15 minutes. Turn beets and continue cooking until crisp, another 15 to 20 minutes. Transfer chips to a wire rack to cool.
