400 grams Green cabbage
200 grams Celery root
1 carrot
500 grams Beets
1 onion
2 tablespoons vegetable oil
1 liter Vegetable broth
salt
freshly ground peppers
ground Caraway
ground cilantro
1 tablespoon Wine vinegar
1 pinch sugar
Dill (for garnish)

Steps:

  • Rinse the cabbage, trim and cut or slice into thin strips. Peel the celery root, carrot and beets and dice. Peel the onion and chop finely. Sweat the onion until translucent in the oil. Add the broth and the remaining vegetables and simmer for about 30 minutes.
  • Season with salt, pepper and the spices, add the vinegar and sugar and distribute between serving bowls. Serve garnished with dill.

1 shallot
50 grams ginger
100 grams starchy potatoes
300 grams Beets
200 grams Red cabbage
2 tablespoons Canola oil
800 milliliters Vegetable broth
salt
freshly ground peppers
1 tablespoon balsamic vinegar
1 teaspoon ground cilantro
100 milliliters Whipped cream
100 grams Sour cream
20 grams chopped Hazelnuts

Steps:

  • Peel shallot and ginger and chop finely. Peel potatoes and beets and coarsely chop. Rinse red cabbage, trim and cut into fine strips.
  • Heat oil in a saucepan. Saute ginger and shallot in the saucepan until soft. Add potatoes, beet and cabbage and saute briefly. Pour in broth and simmer for 25-30 minutes. Then puree with an immersion blender and season with salt, pepper, vinegar and coriander.
  • Beat cream in a bowl until stiff and mix in a bowl with sour cream. Serve soup in bowls and garnish each with a dollop of sour cream mixture and nuts.
