BEER CAN CHICKEN RECIPE | JAMIE OLIVER RECIPES

Beer can chicken recipe | Jamie Oliver recipes image

I first roasted chicken like this when I visited the US – the steam from the beer creates the most amazingly juicy results.

Total Time 1 hours 35 minutes

Yield 6

Number Of Ingredients 16

1 x 1.8 kg whole free-range chicken
olive oil
1 x 300 ml can of beer
2 tablespoons barbecue sauce
1 fresh red chilli deseeded
1 bunch of spring onions trimmed
½ a bunch of fresh coriander
1 heaped tablespoon smoked paprika
1 heaped teaspoon cayenne pepper
1 heaped tablespoon fennel seeds
1 heaped tablespoon coriander seeds
1 teaspoon cumin seeds
1-2 dried red chillies
1 heaped teaspoon sea salt
1 heaped tablespoon freshly ground black pepper
1 heaped tablespoon soft dark brown sugar

Steps:

    1. I first roasted chicken like this when I visited the US – the steam from the beer creates the most amazingly juicy results.
    2. Preheat the oven to 200ºC/400ºF/gas 6. Remove the chicken from the fridge and leave aside to come up to room temperature. Bash the rub ingredients to a fine powder in a large pestle and mortar, then drizzle the chicken with olive oil. Sprinkle over the rub and use your hands to massage all those lovely flavours into all the nooks and crannies.
    3. Crack open the beer and pour out around two-thirds of it (or drink it!), then carefully lower the chicken cavity onto the can so it looks like it’s sitting up. Position the chicken so it’s upright on a roasting tray, then place in the oven and cook for around 1 hour 10 minutes, or until golden and cooked through. To check it’s done, insert a knife into the thickest part of the thigh – the juices should run clear.
    4. Brush the chicken all over with the barbecue sauce, then return to the oven for a further 10 minutes, or until dark and sticky. Meanwhile, finely slice the chilli and spring onions and pick the coriander leaves. Once ready, carefully remove and discard the can, then carve up the bird, scatter over the chilli, spring onions and coriander leaves, then serve.

BEER CAN CHICKEN | POULTRY RECIPES | WEBER GRILLS

Beer Can Chicken | Poultry Recipes | Weber Grills image

Beer Can Chicken

Provided by Jamie Purviance and Sandra S. McRae

Categories     Poultry

Total Time 1 hours 40 minutes

Prep Time 10 minutes

Cook Time 1 hours 30 minutes

Yield 4 servings

Number Of Ingredients 11

1 teaspoon mustard powder
1 teaspoon granulated onion
1 teaspoon paprika
1 teaspoon kosher salt
½ teaspoon granulated garlic
½ teaspoon ground coriander
½ teaspoon ground cumin
½ teaspoon freshly ground black pepper
1 whole chicken, about 4 pounds, neck, giblets, and excess fat removed
2 teaspoons vegetable oil
1 can (16 fluid ounces) lager or other beer (tall boy)

Steps:

  • In a small bowl combine the rub ingredients.
  • Lightly brush the chicken all over with the oil and season, inside and outside, with the rub.
  • Prepare the grill for indirect cooking over medium heat (350° to 450°F).
  • Open the beer can and pour off half of the beer. Using a church key–style can opener, make two more holes in the top of the can. Set the can on a flat surface and slide the chicken over the top so the can fits inside the cavity. Transfer the chicken-on-a-can to the grill, keeping the can upright. Carefully balance the chicken on its two legs and the can. Grill over indirect medium heat, with the lid closed, until the juices run clear and the internal temperature reaches 160° to 165°F in the thickest part of the thigh (not touching the bone), 1¼ to 1½ hours.
  • Using tongs, grasp the bird and slide a sturdy, wide spatula under the beer can. Carefully transfer it in an upright position to a platter and let rest for 5 to 10 minutes (the internal temperature will rise a few degrees during this time). Using tongs to hold the chicken and paper towels to hold the can, give the chicken a little twist to loosen the can before trying to remove it. Carefully lift the chicken off the beer can, keeping the can upright to prevent the hot beer from spilling (the beer will be very hot). Discard the beer. Cut the chicken into serving pieces. Serve warm.

BIG GREEN EGG | BEER CAN CHICKEN
Beer can chicken from the Big Green Egg has become a classic by now… but in this recipe, we’ve added a little twist: Radler beer. The refreshing sweet citrus taste of the Radler makes this beer a real treat! While the chicken is cooking, the beer in the can will evaporate, keeping the chicken tender and juicy on the inside. This is primarily for the sake of the breast meat, as it cooks quicker than the thighs. The great thing about this recipe is that you only need half a can, so make sure the beer is nice and cold!

  • Ignite the Big Green Egg. Put the convEGGtor into the EGG with its legs facing upwards, close the lid and heat up to 180°C. Meanwhile mix together all the ingredients for the rub. Carefully lift the skin away from the chicken meat by sliding your fingers under the skin and moving them from left to right. Spread some of the rub between the skin and the meat and rub it in well. Also spread some rub into the cavity of the chicken. Thoroughly rub olive oil into the skin, then spread rub onto the skin until it is completely covered. Fix the half-full can of Radler into the Beer Can Chicken Roaster and put the chicken over it. Put in the Round Drip Pan and place in the middle of the convEGGtor. Close the lid of the EGG and cook the beer can chicken for 60 to 70 minutes. Remove the Drip Pan from the EGG using the EGGmitt and grate some lime and lemon zest over the bird before serving.
