Spicy Fritos Beefy Nacho Grillers – Mama Bri's Recipes image

Cheesy, beefy, and spicy all wrapped in one delicious warm grilled tortilla.

1 lb Ground beef
1 packet Taco seasoning (McCormick)
1/2 cup Nacho cheese
1 cup Flamin' Hot Fritos
7 Flour tortillas

Steps:

  • Cook the ground beef in a skillet and prepare it according to the taco seasoning packet instructions.
  • After taco meat is ready, add nacho cheese and mix it all together.
  • Place Fritos in a sandwich bag and crush them flat a few times. Leave some bigger pieces.
  • Prepare the grillers by placing Fritos down the middle, then a layer of the taco mixture on top.
  • Roll the top and bottom flaps and then the sides.
  • Heat a skillet on medium low heat and coat with spray butter.
  • Place the grillers seam side down and cook for a few seconds. Check to see how they look and when they are to your desired grilled look flip them. The first batch always cooks slower than the rest so keep that in mind.
  • Let them cool then serve with salsa and sour cream.
  • Enjoy!

1 can Ranch Style beans (pinto beans in seasoned tomato sauce), undrained
2 tablespoons chili powder
1 tablespoon brown sugar
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon dried oregano
1 teaspoon cayenne pepper
1 tablespoon cider vinegar
3/4 teaspoon salt
Baked tortilla chips
Optional: Shredded cheddar cheese, lettuce, sour cream and guacamole

Steps:

  • Combine first 8 ingredients in a 4-qt. slow cooker. Cook, covered, on low until meat is crumbly, 4-6 hours. Stir in vinegar and salt. Serve with tortilla chips and, if desired, toppings., Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally. Add water if necessary. Serve with chips and toppings if desired.
