A beef stir-fry that has wonderful flavors without using a ton of spices. Fresh ginger mixes will with the soy sauce and makes a quick and easy sauce. Lots of veggies add color and crunch.

2 cups brown rice
4 cups water
2 tablespoons cornstarch
2 teaspoons white sugar
6 tablespoons soy sauce
¼ cup white wine
1 tablespoon minced fresh ginger
1 pound boneless beef round steak, cut into thin strips
1 tablespoon vegetable oil
3 cups broccoli florets
2 carrots, thinly sliced
1 (6 ounce) package frozen pea pods, thawed
2 tablespoons chopped onion
1 (8 ounce) can sliced water chestnuts, undrained
1 cup Chinese cabbage
2 large heads bok choy, chopped
1 tablespoon vegetable oil

Steps:

  • Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender, and liquid has been absorbed, 45 to 50 minutes.
  • Combine cornstarch, sugar, soy sauce, and wine in a small bowl until smooth. Stir in ginger; toss beef in sauce to coat.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook and stir broccoli, carrots, pea pods, and onion for 1 minute. Stir in water chestnuts, Chinese cabbage, and bok choy; cover and simmer until vegetables are tender, about 4 minutes. Remove from skillet and keep warm.
  • In same skillet, heat 1 tablespoon oil over medium-high heat. Cook and stir beef until desired degree of doneness, about 2 minutes per side for medium. Return vegetables to skillet; cook and stir until heated through, about 3 minutes. Serve over rice.

Steps:

  • Before making the beef stir fry, you need to first tenderize the beef with baking soda or sodium bicarbonate. Then you need to mix the beef strips with some baking soda with the help of the tongs or with your hands and keep it in the refrigerator for 30-45 minutes. After that, rinse the beef well and drain the water extracted from the meat and dry it with paper towel.This process is known as velveting the beef, this helps the meat become more tender, and allows for spices to absorb better
  • Pour the sauce in a bowl, add some water (two tablespoons), and add some cornstarch. This makes the sauce thicker and will make the entire meal taste better. Just make sure to mix the cornstarch and water separately so that no lumps form.
  • This step is for marinating the beef strips. You need  ? of the sauce prepared earlier to mix in with the beef. Once mixed, store it in an airtight container, and then put it in the refrigerator for a minimum of 30 minutes or overnight for better results.Note: In some cases, if you want, you can keep the beef strips for upto three months! This process makes the beef strips more tender to give you a fantastic experience.
  • Use a pan and add some oil. You can use a wok as well if you are comfortable with that. Once the oil is hot, add some garlic and ginger and fry until they turn light brown. Take the marinated beef, put it in the pan, and cook it until the texture and color changes to light brown and the meat is slightly undercooked. We don’t want it to be fully cooked.
  • Now add the other vegetables and the remaining cornstarch and cook for more than 20 minutes. Now add some rice vinegar and the remaining sauce, cook it for 30 minutes more.

Turn the heat off and toss through the spring onions. *NOTES: Chinese Shaoxing wine is a type of cooking rice wine. It’s available in the Asian aisle of some major supermarkets or from an Asian grocery store. If you’d rather leave it out, simply replace with beef stock.

  • "Remove excess fat from meat, and slice against the grain into thin strips. Place meat in a quart ziploc bag. Combine marinade ingredients, stir well and pour over meat. remove excess air from bag, seal and squeeze bag to distribute marinade evenly over all the meat. Refrigerate 1-4 hours. Combine all sauce ingredients, whisk together and set aside. Remove marinated meat from fridge and drain marinade from the meat. place meat in a large bowl and add 3 tablespoons corn starch. Toss until all meat is coated evenly. Heat large skillet over medium high heat, add 2TBS olive oil to the pan. Add meat in batches keeping it in a single layer, not overcrowding the pan. Sear the steak on the first side until it is very brown and slightly crisp (about 4 minutes ?? seems too long ??) Flip and sear the other side until crisp and brown. When both sides are cooked, transfer to a plate and set aside. Continue process with remaining steak until all piece are cooked, adding more oil as needed. Stir sauce ingredients and pour into the skillet. In a small dish combine corn starch and cold water, mix well to form slurry. Once sauce begins to bubble, slowly pour in the slurry WHILE STIRRING. Sauce should thicken quickly. Return steak and veggies to skillet, and toss to coat all with the sauce. Serve over rice."
