Categories     Meat and poultry

Total Time 30 minutes

Number Of Ingredients 12

soy sauce 3 tbsp
shoaxing rice wine 2 tbsp
oyster sauce 2 tbsp
golden caster sugar 2 tsp
cornflour 2 tsp
fresh or straight-to-wok udon noodles 300g
lean frying steak 300g, cut into strips
groundnut or sunflower oil for frying
ginger a small chunk, peeled and shredded
spring onions 4, chopped (keep some green bits for garnish)
red chilli 1, chopped
pak choy 200g, shredded

Steps:

  • Mix the soy, wine, oyster sauce and sugar until the sugar dissolves. Mix the cornflour with 2 tbsp water then stir into the sauce.
  • If using straight-to-wok noodles put them in a colander and pour over a kettle of boiling water. This will loosen them up a bit and get rid of any coating. Fresh noodles are fine to add as they are.
  • Toss the steak with 1/2 tbsp oil. Heat a wok or pan to high then sear the steak for 2-3 minutes. Scoop the steak out of the pan then add the ginger, spring onions and chilli with another splash of oil and stir-fry for a couple of minutes.
  • Add the pak choy and cook until just wilted. Tip in the sauce and noodles with the steak and any juices. Toss until heated through and the sauce thickens slightly. Serve in warm bowls sprinkled with the spring onion greens.

15-MINUTE SHANGHAI NOODLES - MARION'S KITCHEN
Take a trip to Shanghai in just 15 minutes with this easy noodle dish. I used pork and udon noodles and paired them with mushrooms and Asian greens, but you could use any veg that you have in your crisper. The honey soy marinade is the perfect blend of sweet and savoury and would work equally well with chicken.
From marionskitchen.com
  • Combine the pork with the marinade ingredients and set aside. Combine the ingredients for the stir-fry sauce. Heat a large pot of water over high heat. When boiling, add the noodles and use tongs to gently shake the noodles apart. As soon as they become loose, drain and transfer the noodles to a large bowl or tray. Heat the vegetable oil in a large wok or frying pan over high heat. Add the garlic and the marinated pork. Spread the pork out in the pan so that it has as much contact with the hot pan as possible. Sear for a minute or so then stir-fry and sear again. When the pork is almost cooked, add the shitake mushrooms and stir-fry for half a minute. Then add the cabbage and toss for another half a minute. Then add the choy sum and toss for another half a minute. Add the noodles and the stir-fry sauce and mix until everything is well combined. Serve warm.

I made this the other night and it was easy to make and delicious. The Shanghai noodles are the large thick ones, I often use the smaller thin oneswhich are similiar to the noodles used when making chow mein. I added snow peas to the recipe and double up on the garlic. [Steve]
