4 slices Beef roulade (each 180 grams)
2 day-old White rolls
300 grams fresh Porcini mushroom
1 egg
4 tablespoons Whipped cream
4 tablespoons freshly grated Parmesan
freshly ground peppers
salt
butter
125 milliliters stronger Red wine
125 milliliters Beef stock
1 tablespoon Mustard seed

Steps:

  • Clean porcini mushrooms and cut into small pieces. Remove crust from the bread and tear into small pieces. Whisk the egg with the cream and soak the bread. When the bread is nice and soft, mix in the Parmesan and season vigorously with salt and pepper.
  • Spread the beef cutlets on the work surface. With wet hands, line with the bread stuffing and smooth. Place the mushrooms on top and season with salt and pepper. Roll and secure with wooden skewers.
  • Lightly dust roulades with flour. Heat 1 tablespoon butter in a high pan and cook the rolls until golden brown while turning. Season with salt and pour in the wine. Let reduce by about half. Add the mustard seed and the stock, cover and cook over low heat for 20 minutes.
  • Lift the roulades from the pan and keep warm. Simmer the braising liquid, season again vigorously and serve with the roulades.

onion, sliced in quarters
whole garlic pickles
mustard
bay leaf

Steps:

  • Place the rouladen on the counter.
  • Spread mustard on each rouladen.
  • Season with salt and pepper.
  • Place 2 bacon strips on each rouladen.
  • On one end of the rouladen, place a pickle and onion (with the pickle being on outer end, then onion).
  • Roll the rouladen and either use toothpickes or thread to keep in place.
  • The best pot to use if you have it is cast iron, but a regular roasting pot is fine too.
  • Place olive oil and water on bottom of pot.
  • Put in the rouladen.
  • Put about 6 bay leaves in the pot.
  • Bake at 325-350 degrees for at least 3 hours.
  • A good slow cook to have all the flavors blend in and for the pickle and onion to be moist.

Remove the meat from the pot, cover loosely, and allow to sit for 20 to 30 minutes before slicing and serving. If necessary, continue cooking the pan juices until reduced to sauce consistency. When the meat has rested at least 20 minutes, remove the twine, slice into 1/2-inch slices, and serve with the reduced pan juices.
