Total Time 1 hours 15 minutes

Prep Time 30 minutes

Cook Time 45 minutes

Yield 6 serving(s)

Number Of Ingredients 18

1 lb ground beef
1 medium onion, finely chopped
2 tablespoons minced fresh garlic
1 small green bell pepper, seeded and finely chopped
2 teaspoons dried chili pepper flakes (optional)
1 tablespoon seasoning salt (or to taste or use white salt)
black pepper
1 (4 ounce) can green chilies, diced
12 (6 inch) corn tortillas (cut into about 1-1/2-inch pieces)
1 (10 ounce) can cream of mushroom soup, undiluted
1 1/2 cups canned sliced black olives
1 1/4 cups red enchilada sauce (I use my own recipe for this)
1/2 cup sour cream
3 1/2 cups cheddar cheese (or use a Mexi-blend cheese)
2 firm tomatoes, coarsely chopped
shredded lettuce
diced tomato
chopped sweet onion

Steps:

  • Set oven to 400 degrees.
  • Grease an 11 x 7-inch casserole dish.
  • In a large skillet cook the ground beef with the green chiles, onions, garlic, bell pepper, dried chili flakes (if using) and chili powder; cook over medium heat until beef is no longer pink; drain fat completely (you can prepare this mixture up to a day in advance and refrigerate).
  • Season with seasoned salt and black pepper to taste then transfer to a large bowl.
  • Stir in the tortilla pieces with cream of mushroom soup, black olives, enchilada sauce, sour cream and 1-1/2 cups shredded cheese; mix to combine.
  • Transfer to prepared baking dish.

Cook Time 0S

Yield 8-10 servings

Number Of Ingredients 19

1 c.

long-grain white rice

2 tbsp.

olive oil

1 1/2 lb.

ground beef

1

medium onion, chopped

2

garlic cloves, finely chopped

2

4-ounce cans diced green chiles

2 tsp.

ground cumin

2 tsp.

paprika

1 tsp.

kosher salt

1/2 tsp.

black pepper

1

large tomato, chopped

1 c.

corn kernels, thawed if frozen

1

16-ounce jar salsa verde

12

small corn tortillas

3 c.

grated sharp cheddar cheese (about 12 ounces)

2

10-ounce cans enchilada sauce

1/2 c.

chopped black olives

3

scallions, thinly sliced

Sour cream, for serving

Steps:

  • Cook the rice according to the package directions. Set aside. Heat the olive oil in a large skillet over medium-high heat. Add the beef, onion and garlic and cook, stirring, until the beef is browned, 4 to 6 minutes. Pour off the fat, then add the green chiles, cumin, paprika, salt and pepper to the skillet and stir to combine. Add the tomato and 1 cup water and simmer gently until reduced by half, about 2 minutes. Remove from the heat, stir in the corn and set aside.  Cover the casserole with foil, tenting it so it doesn’t touch the cheese. Place on a rimmed baking sheet and bake for 20 minutes. Uncover and continue baking until bubbly and hot, about 20 minutes more. Switch the oven to broil and broil until just golden on top, about 5 minutes. Let sit for at least 10 minutes. Top with the olives and scallions and serve with sour cream.

TEN MINUTE ENCHILADA SAUCE RECIPE | ALLRECIPES
I used it to make beef and bean burritos and it was perfect without all the extra chemicals from a canned enchilada sauce. I did cut the water down to one cup and I added half a cube of beef boullion. After adding the cup of water, it looked like the perfect consistency, I know enchilada sauce is pretty thin. thanks, for a helpful recipe.
