Steps:
- In a large bowl, combine the first four ingredients. Add beef; toss to coat. In a large skillet or wok, stir-fry beef in oil until no longer pink; remove and keep warm. , Reduce heat to medium. Add vegetables and broth; stir-fry for 4 minutes. Return beef to the pan; cook and stir for 2 minutes or until heated through. Serve with chow mein noodles or rice.

Steps:
- Cut your flank steak into medium or 1/4 inch slices. Once cut, put the meat into a room-temperature water bath to rinse out the myoglobin.
- Peel and thinly slice the yellow onion into 1/4 inch thickness. Wash the bean sprouts, drain, and set aside. Wash and chop the green onions into 1 inch long pieces. Use all of the green onions and separate the white parts from the green parts.
- In a medium-sized bowl, mix the baking soda, cornstarch, oyster sauce, soy sauce, tamari, white pepper, water, cooking wine, sugar, and mix until everything is incorporated and smooth.
- Drain the meat from the water bath, squeeze out the excess water. Add the meat into the marinade and mix until the meat is fully coated in the marinade and set it aside.
- Prepare the rice noodles by separating the noodles if you see them stuck together.
- In a small bowl, mix tamari, soy sauce, and oyster sauce. Once mixed, set it aside.
- Add cooking oil to the marinated beef to seal the juices in the beef.
- Fry the yellow onion and the white parts of the scallions for 20-30 seconds or until fragrant.
- Add the beef and mix. Let everything cook together for 1 more minute. Turn off the heat and add the sesame oil.
- Taste to adjust the flavors and plate once it's to your taste! This is usually served at the center of the table and everyone can take the amount they want.

- Combine the beef and the marinade ingredients in a large bowl. Set aside while you prepare the other ingredients (the marinade only needs about 10-15 minutes to work its magic). Combine the ingredients for the stir-fry sauce in a bowl. Set aside for later. If using store-bought rice noodles, prepare them by removing them from the wrapper and microwaving for about 30 seconds to soften. Then use your hands to gently separate the noodles so they don’t clump together. Heat the vegetable oil in a wok or large frying pan. Add the onion and stir-fry for a couple of seconds. Then add the beef and spread the pieces out in the pan. Leave them to brown on the first side for half a minute or so. Then toss and stir-fry and repeat until the beef is starting to char and is almost cooked. Then toss through the bean shoots. Then add the noodles and the stir-fry sauce. Stir-fry for about a minute or until the sauce has thickened and the noodles are glossy. Toss through the spring onion and serve.
