Steps:
- Preheat the oven to 160 ºC (325 ºF).
- Spray a fairly large ovenproof dish with non-stick spray.
- Fry the beef cubes in oil until golden brown.
- Season with salt and black pepper to taste.
- Transfer to the dish.
- Fry the onions in a little oil until soft and translucent.
- Add the tomatoes.
- Season with sugar, cinnamon, ginger and turmeric and stir-fry for a few minutes Add to the meat and mix.
- Mix all the ingredients for the sauce and pour over the meat mixture.
- Mix, cover and bake in an ovenfor about 1 1/2 to 2 hours or until the meat is tender.
- Lovely with Rice or Mashed Potatoes.

Heat the oil in a large casserole then brown the beef in batches over a medium heat and set aside.
In the same casserole, fry the onions for 5 minutes or until lightly browned. Now add the spices and garlic and fry for another 2 minutes until fragrant.
Add the tomatoes, tomato purée, beef stock and 150ml (¼pt) water. Bring to the boil then reduce, cover and leave to simmer gently over a low heat for 3 to 4 hours or until the meat is very tender.
Mix the tahini, lemon juice and yoghurt together, season and set aside. When ready to serve, spoon over the yoghurt mixture, scatter with herbs and chopped apricots then sprinkle over some paprika. Serve with giant couscous.
