Yield 6 servings (serving size: about 1 cup stir-fry and 2/3 cup rice)

Number Of Ingredients 11

1 pound flank steak, trimmed
2 tablespoons low-sodium soy sauce
1 teaspoon minced garlic
½ teaspoon freshly ground black pepper
3?½ tablespoons water, divided
2 tablespoons oyster sauce
¼ teaspoon crushed red pepper
¾ pound broccoli
2 tablespoons canola oil, divided
1 large red bell pepper, halved, seeded, and cut into 1-inch pieces (about 1 1/2 cups)
4 cups hot cooked long-grain rice

Steps:

  • Cut steak in half lengthwise. Cut each half across the grain into 1/8-inch-thick slices. Combine beef, soy sauce, garlic, and black pepper; toss well. Cover and refrigerate 30 minutes.
  • Combine 1 1/2 tablespoons water, oyster sauce, and crushed red pepper in a small bowl; set aside.
  • Cut broccoli into florets. Peel broccoli stems; cut stems diagonally into 1/4-inch-thick slices.
  • Heat 1 tablespoon canola oil in a large nonstick skillet over medium-high heat. Add beef mixture to skillet; cook 3 minutes or until beef is browned, stirring constantly. Remove from heat. Transfer beef mixture to a bowl.
  • Heat the remaining 1 tablespoon canola oil in pan over medium-high heat. Add broccoli; cook 2 minutes, stirring constantly. Add the remaining 2 tablespoons water; cook 1 minute, stirring constantly. Add bell pepper; cook 30 seconds, stirring constantly. Return beef mixture to pan. Stir in the oyster sauce mixture; cook until thoroughly heated. Serve over rice.

1/2 c. low-sodium soy sauce
1/2 c. low-sodium chicken broth
2 tbsp. rice wine vinegar
3 tbsp. brown sugar
3 cloves garlic, minced
1 tbsp. sesame oil
1 tbsp. cornstarch
1 tbsp. fresh ginger, grated
1 tbsp. sriracha
2 tbsp. canola oil, divided
1 lb. skirt steak, thinly sliced
1 head broccoli, cut into florets
1 red pepper, thinly sliced
Crushed red pepper flakes, for garnish (optional)

Steps:

  • Combine rice, salt, and 2 ¼ cups water in a medium-sized pot with tight-fitting lid. Bring to a boil, then reduce heat and simmer, covered, until all water is absorbed, 15 minutes. Turn off heat and let sit 10 minutes, then remove lid and fluff with a fork. Meanwhile, in a medium bowl, whisk together soy sauce, chicken broth, vinegar, brown sugar, garlic, sesame oil, cornstarch, ginger, and Sriracha. In a large deep-sided skillet, heat oil. Cook steak in batches until nicely browned, about 4 minutes, then transfer to a plate. Add remaining oil to skillet along with broccoli and red pepper and cook until broccoli is bright green, 1 to 2 minutes. Add ½ cup water and let steam, covered, until vegetables are tender-crisp, 2 to 3 minutes. Add sauce and steak to skillet and bring to a boil. Let simmer until thickened, 3 minutes more. Serve beef and broccoli with cooked rice and garnish with crushed red pepper, if using.
