BONELESS BBQ BEEF RIBS – INSTANT POT – THE BEARDED HIKER
Steps:
- If you're browning the ribs, which is optional, turn your pressure cooker on to the saute feature. When it gets hot, add some oil to the pot. Season your ribs on both sides with your favorite BBQ seasoning. Add to the pot in batches and brown on each side. Remove to a plate when browned and add the remaining ribs until all are browned.
- Turn off your pressure cooker. Add in the beef broth, apple juice and liquid smoke. Stir to combine and scrape the bottom very well to remove all browned bits (deglaze). Add all the ribs back to the pot. If you pot tends to run very hot when sauteing like mine does, let the pot sit in the off mode for about 5 minutes. If your pot doesn't run hot, keep on trucking.
- Cook the ribs on HIGH pressure for 30 minutes. When done, let the pressure come down naturally for 10 minutes and the carefully quick release the remaining pressure.
- Turn your oven broiler on to high. Remove the ribs to a foil lined baking dish or an aluminum pan, leaving the juice in the pot. Put your favorite BBQ sauce over the ribs. Add slivers/slices of butter over the ribs. Sprinkle brown sugar on top of the butter. Place under the broiler until the butter melts and it gets a little bit bubbly. Watch it carefully, it can go from good to burned in no time with a high broiler setting. Remove and enjoy!

- Preheat broiler. Mix first 9 ingredients. Place pork in a foil-lined 15x10x1-in. pan; rub generously with seasonings. Broil 4-5 in. from heat until browned, 2-3 minutes per side., Transfer to a 5-qt. slow cooker. Whisk together barbecue sauce and beer; pour over ribs. Cook, covered, on low until tender, 3-4 hours., Remove ribs. Reserve 2 cups cooking juices; discard remaining juices. Skim fat from reserved juices. Serve with ribs.

- In a 3-qt. slow cooker, mix ketchup, brown sugar, vinegar, seasoned salt and, if desired, liquid smoke. Add ribs; turn to coat. Cook, covered, on low 5-6 hours or until meat is tender., Remove pork to a serving plate. For sauce, skim fat from cooking liquid; transfer liquid to a small saucepan to thicken; bring to a boil. Cook 12-15 minutes or until sauce is reduced to 1-1/2 cups. Serve with ribs.
To make ahead: In a large airtight container, combine ketchup, brown sugar, vinegar, seasoned salt and, if desired, liquid smoke. Add pork; cover and freeze. To use, place container in refrigerator 48 hours or until ribs are completely thawed. Cook as directed.
