Brothers Dick and Mac McDonald opened the first McDonald's drive-in restaurant in 1948, in San Bernardino, California. When the brothers began to order an increasing amount of restaurant equipment for their growing business, they aroused the curiosity of milk-machine salesman Ray Kroc. Kroc befriended the brothers and became a franchising agent for the company that same year, opening his first McDonald's in Des Plaines, Illinois. Kroc later founded the hugely successful McDonald's Corporation and perfected the fast food system that came to be studied and duplicated by other chains over the years. The first day Kroc's cash register rang up $366.12. Today the company racks up about $50 million a day in sales in more than 12,000 outlets worldwide, and for the past ten years a new store has opened somewhere around the world an average of every fifteen hours. The double-decker Big Mac was introduced in 1968, the brain-child of a local franchisee. It is now the world's most popular hamburger, and it is super easy to duplicate at home. Juicy steak, crunchy greens and sticky soy sauce – this beef and broccoli stir-fry recipe is a joy.

200 g purple sprouting broccoli
1 red onion
2 cloves of garlic
5 cm piece of ginger
1 fresh red chilli
1 lime
2 teaspoons coriander seeds
2 x 300 g quality sirloin steaks
olive oil
3 tablespoons soy sauce
sesame oil

Steps:

    1. Place the broccoli into a heatproof bowl with a pinch of sea salt, then cover with boiling water, leave for 10 minutes, then drain.
    2. Peel and finely slice the onion and garlic, and peel and finely chop the ginger. Finely slice the chilli and cut the lime into wedges.
    3. Pound the coriander seeds in a pestle and mortar with a pinch of salt and black pepper.
    4. Slice the steaks into finger-sized strips, then sprinkle over the spice mixture and toss to coat.
    5. Place a wok or large frying pan on a hight heat. Drizzle in 1 teaspoon of olive oil, add the onions, garlic and ginger, then fry for 2 minutes.
    6. Drop in the seasoned beef and fry for 2 minutes, then add the broccoli and fry for a further 2 minutes, stirring all the time.
    7. Pour in the soy sauce and 1 teaspoon of sesame oil, then toss to coat.
    8. Delicious served with egg noodles or steamed rice, and with some fresh chilli scattered on top and a good squeeze of lime juice.

  • Preheat oven to 450°. In a large roasting pan, bake soup bones, uncovered, 30 minutes. Add carrots, celery and onions. Bake 30 minutes; drain fat., Using a slotted spoon, transfer bones and vegetables to a large Dutch oven. Add warm water to roasting pan; stir to loosen browned bits. Transfer pan juices to Dutch oven. Add seasonings and enough cold water just to cover. Slowly bring to a boil, about 30 minutes. Reduce heat; simmer, uncovered, 4-5 hours, skimming foam. If necessary, add water during first 2 hours to keep ingredients covered. , Remove beef bones; cool. If desired, remove meat and discard bones; save meat for another use. Strain broth through a cheesecloth-lined colander, discarding vegetables and seasonings. If using immediately, skim fat. Or refrigerate 8 hours or overnight; remove fat from surface., Broth can be covered and refrigerated up to 3 days or frozen 4-6 months.
