Think empanadas are hard to make? Think again! It’s easy to throw together this South American classic when you start with Pillsbury™ pie crusts. The filling is simple, too. Cheesy ground beef and vegetables give these empanadas big flavor without any fuss.

Number Of Ingredients 8

1 lb lean (at least 80%) ground beef
1 medium onion, chopped (1/2 cup)
1/2 teaspoon chili powder
1/4 teaspoon salt
1 can (14 1/2 oz) diced tomatoes with mild green chiles, well drained
1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1/2 cup shredded Monterey Jack cheese (2 oz)
1 egg, beaten

Steps:

  • Heat oven to 400°F. In 12-inch skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain. Stir in chili powder, salt and tomatoes. Remove from heat.
  • On ungreased large cookie sheet, unroll pie crusts. Spoon about 2 cups beef mixture onto half of each crust, spreading to within 1/2 inch of edge. Top each with 1/4 cup cheese.
  • Brush edge of each crust with beaten egg. Fold untopped half of each crust over filling; press edge with fork to seal. Cut slits in several places in top of each; brush with beaten egg.
  • Bake 20 to 25 minutes or until golden brown. Cut into wedges to serve.

This Easy Ground beef chili is thick and rich and comes together in about 30 minutes. Serve with cornbread, saltines, tortilla chips, or over a loaded baked potato for a delicious weeknight or lazy weekend meal.

Number Of Ingredients 10

2 pounds lean ground beef (, 93% or leaner)
1 medium onion (, diced)
2 cloves garlic (, minced)
8 oz tomato sauce
2 tablespoons chili powder
1/2 teaspoon ground cumin ([See Note 1])
1 teaspoon paprika
1 tsp salt (, more or less to taste)
1 tsp ground pepper (more or less to taste)
2 cups kidney beans (if canned -rinsed and drained)

Steps:

  • Place the ground beef in a large pot and add the onions and garlic.
  • Cook over medium heat until browned.
  • Drain off any excess fat, and then pour in the tomato sauce, chili powder, cumin, paprika, salt and ground black pepper.
  • Stir together well, cover, and then reduce the heat to low.
  • For a quick weeknight meal, simmer over low heat for 25minutes, stirring occasionally.If you have more time, simmer on low for an hour, stirring occassionally.
  • If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
  • Taste and adjust the seasonings. Add the beans and simmer for 10 minutes.

If necessary, add water during first 2 hours to keep ingredients covered. , Remove beef bones; cool. If desired, remove meat and discard bones; save meat for another use. Strain broth through a cheesecloth-lined colander, discarding vegetables and seasonings. If using immediately, skim fat. Or refrigerate 8 hours or overnight; remove fat from surface., Broth can be covered and refrigerated up to 3 days or frozen 4-6 months.
