200 grams powdered sugar
125 grams sugar
150 grams soft butter
225 grams Pastry flour
150 grams Hazelnuts (finely ground)
0.25 teaspoon Ground clove
0.25 teaspoon Ground cinnamon
Fat (for baking pan)
30 grams powdered sugar
3 tablespoons sugar

Steps:

  • For the cookies, stir 2-3 tablespoons water with 200 grams powdered sugar. Pipe into star shapes and allow to dry.
  • Beat sugar and butter until creamy. Mix in flour, nuts and spices. Cover and refrigerate about 1 hour.
  • Butter the bear paw pan with wells about 5 cm (approximately 2 inches). Press a thin layer of dough into the wells, put on middle rack in a preheated oven 180°C (approximately 350°F) and bake until golden brown, about 15 minutes. Remove, cool slightly, then unmold from wells and allow to cool on a wire rack.
  • To decorate, mix about 1 teaspoon water with powdered sugar until smooth, pour into a freezer bag, cut off a tiny corner and pipe onto bear paws. Sprinkle with sugar. Allow icing to dry before serving.

2.75 ounces Dark chocolate
3 eggs
9 tablespoons powdered sugar
2 tablespoons honey
4 tablespoons milk
1 teaspoon Vanilla
2 tablespoons cocoa powder
1 teaspoon Baking powder
7 tablespoons Pastry flour
3.5 ounces ground almonds

6 ounces dark Couverture

Steps:

  • Melt the butter. Finely chop the dark chocolate by hand or a blender. Mix the eggs with the powdered sugar, honey, milk, vanilla sugar and cocoa in a bowl. Mix the baking powder with the flour and the almonds, and add to the egg mixture. Stir together the melted butter and the finely chopped dark chocolate, and add to the batter. Covered and let rest for at least two hours in refrigerator.
  • Grease the wells of a cookie baking tray with melted butter and sprinkle with flour. Fill the wells with batter up to ¾th and bake in a preheated oven at 400°F for 10-15 minutes. Remove from oven, let cool slightly, release from the mold, and leave to cool.
  • Melt the melting chocolate in a bowl over a hot water bath and dip the bottoms of the baked cookies into it. Let dry on a rack and serve.
