Steps:
- Heat a nonstick frying pan over a medium heat and add Extra-Virgin Olive Oil (2 tablespoon). Let warm for 2 minutes.
- Add the Garlic (4 clove) and Onion (1) and mix with the oil. Cook for 3 minutes.
- Add the Green Bell Pepper (1/2) and mix well. Cook for 4 minutes.
- Add the Canned Lima Beans (2 cup). Season with Sweet Paprika (1/4 teaspoon), Hot Smoked Paprika (1/4 teaspoon), Ground Cumin (1/2 teaspoon), Sea Salt (to taste), and Ground Black Pepper (to taste). Mix everything together until well combined.
- Stir in the Diced Tomatoes (1 can). Taste and adjust seasonings, then change temperature to low heat. Let simmer for 4-5 minutes, then remove from the heat.
- Garnish with Fresh Chives (to taste). Enjoy!

- Sort beans and rinse with cold water. Place in a large saucepan; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1-4 hours or until beans are softened. , Drain and rinse beans, discarding liquid. Return beans to the pan; add bay leaf and water to cover by 2 in. Stir in the tomatoes, sugar, pepper and beans. Cook for 8-10 minutes or until heated through.
