2 tablespoon Extra-Virgin Olive Oil
4 clove Garlic
1 Onion
1/2 Green Bell Pepper
2 cup Canned Lima Beans
1/4 teaspoon Sweet Paprika
1/4 teaspoon Hot Smoked Paprika
1/2 teaspoon Ground Cumin
1 can Diced Tomatoes
to taste Sea Salt
to taste Ground Black Pepper
to taste Fresh Chives

Steps:

  • Heat a nonstick frying pan over a medium heat and add Extra-Virgin Olive Oil (2 tablespoon). Let warm for 2 minutes.
  • Add the Garlic (4 clove) and Onion (1) and mix with the oil. Cook for 3 minutes.
  • Add the Green Bell Pepper (1/2) and mix well. Cook for 4 minutes.
  • Add the Canned Lima Beans (2 cup). Season with Sweet Paprika (1/4 teaspoon), Hot Smoked Paprika (1/4 teaspoon), Ground Cumin (1/2 teaspoon), Sea Salt (to taste), and Ground Black Pepper (to taste). Mix everything together until well combined.
  • Stir in the Diced Tomatoes (1 can). Taste and adjust seasonings, then change temperature to low heat. Let simmer for 4-5 minutes, then remove from the heat.
  • Garnish with Fresh Chives (to taste). Enjoy!

1 cup dried lima beans
1 bay leaf
2 medium onions, chopped
2 tablespoons canola oil
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon sugar
Dash pepper

Steps:

  • Sort beans and rinse with cold water. Place in a large saucepan; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1-4 hours or until beans are softened. , Drain and rinse beans, discarding liquid. Return beans to the pan; add bay leaf and water to cover by 2 in. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 to 1-1/2 hours or until beans are tender. , Drain, discarding liquid and bay leaf. In a large skillet, saute onions in oil until tender. Stir in the tomatoes, sugar, pepper and beans. Cook for 8-10 minutes or until heated through.
